You need to wait a couple of weeks before you see pins then growth is pretty fast as for your bluing have you handled the cake roughly coz that's a bit odd. You should stick em in you FC and leave them apart from misting and fanning.

A hygrometer will not help you at all. It will only add confusion for noobs. I highly suggest removing it.
Your cakes look dry, are you even misting them?

you don't need to cold shock, that is old tek.
just be patient, and try to keep them moist but not wet.
Definitely don't scrap the whole deal.

just relax, you're doing fine. no need to cold shock, and misting and fanning 3 times a day should be just right IMO when you evaporate water off the cakes with your fanning, it creates conditions that trigger pin growth. so don't completely soak them, if your room is set up without any low humidity AC units, or your light isn't pumping loads of heat into the SGFC drying out the perlite, you'll do ok do you have holes on the bottom of your SGFC?

1 wk to consolidate after 100% colonization, dunk for 24 hrs at room temp, cold shock isnt needed like said before thats n old tek and could stall your cake. after dunk roll in verm and mist cakes til glistening and introduce fanning after u mist. mist/fan 2-3 times daily or as needed. dont use a mister that leaves globs of water, could lead to bruising. you want flucations in humidity so the gauge is of no use. room temp is fine for fruiting as long as its not above 85 . higher the temp and more the risk of contam,

You need 4-5" of perlite for an SGFC to work properly.
Prop it up so the bottom holes are exposed, this is a key factor in a successful SGFC.
Mist 2-3 times a day, only mist when you fan.
After misting for a day flip the foil over on the cake. Water likes to accumulate down there and promote bottom pinning.
Don't flip or move a cake once it's pinning, just keep doing what you're doing. If it bottom pins that means the mushrooms liked the bottom of the cake more then the top and you could end up making them abort.
Take the hygrometer out.
Cut the foil down so it's only around the cakes.
