Yea those are pretty to look at, not so much to eat. Just a little too tough and strong flavor in my opinion. If you're going to try any of them try that little baby one, he'll be the most tender.

A unique feature that I really appreciate is the way that they smell EXACTLY like a watermelon rind. You could close your eyes and wave a Squamosus (aka dryad's saddle aka pheasants back aka old dirty Chinese restaurant) and a watermelon rind in front of your face and you'd be hard pressed to tell the difference.

Idk how everyone except me knows what watermelon rind smells like, but it must smell the same as a cucumber. Squamosus is the favored treat of Sasquatch. The babies are a cool shape and a very nice texture. How one can gush over the smell and fuss over the taste is beyond me; they taste exactly as they smell.

I've never smelled the rind... I've probably had a few bites of watermelon over the course of my life. I hate the texture and not a fan of the flavor and then I'm also very sensitive to sugar as it overwhelms my palate and sticks in my mouht for an hour. I experience sweet sort of how people experience sour or bitter, it has it's place in a recipe meshing with other flavor profiles but I can't do it on its own. How people binge on a bag of candy is just shocking to me; but I get that it's not normal to hate sugar. Oddly enough I love honey and don't get that overload sugar flavor from it. I also really hate getting sticky so I've only eaten it with a fork; I realize the appropriate way to eat it is to just go to town on a moon shaped slice like it's pussy.

Technically the watermelon rind smell and cucumber smell are both considered farinaceous. As is the smell of a grain mill. A lot of mushroom odors get classified as farinaceous, despite the fact that they can be quite different.

For instance both Squamosus (aka pheasants back aka Knifey McStab) and Cubensis odors are considered farinaceous, but one could easily tell them apart based on smell alone.

And its more of the leathery consistency that I don't like than anything. The flavor isn't gross or anything it is just a little overpowering when you add it to dishes/eat them sautéed. I'm sure if you used them sparingly in a dish you could dial it in so that you get the subtle flavor without overdoing it. Experimentation is certainly encouraged when dealing with Squamosus (aka dryad's saddle aka Big Baby Jesus). Hell try something wild, make watermelon flavored ice cream with it or something.

You got that right. If you really want to know how to eat a watermelon Petey Greene explains it all too well...
