King kong shiitakes

Hi guys theae are my first shiitake blocks.

I was getting a bit discouraged because they wouldn't fruit. But I just kept soaking and misting these puppies and after 4 weeks I got portobello size ones.

I think they took soo long after fully brown because I forgot the gypsum.

Why would the turn up to be sooo big? Temp here in Australia is 15 Celsius 59 Fahrenheit but a pretty dry

They turn up big and heavy and they grow slow because it is cold
It is also a bit strain related

less pins equals bigger shrooms.  nothing more.  i never use gypsum and harvest 200+lbs weekly.

Sometimes they wont fruit because there are still plenty of nutrients left to digest or the pinning triggers weren't strong enough. With it being cooler they probably took longer to digest everything and like mentioned slower colonizers tend to fruit larger.

Well, this strain is known as the "King Kong" so I think it lives up to its name lol

This is just my opinion and is just one thought on what could be the or part of the problem. I was reading through Stamets "The Mushroom Cultivator" today and ran across some info about choosing mycelium based on agar growth characteristics. I know shiitake tends to grow a bit more fluffy on agar, but Stamets goes on to say in his book that when inoculating grain or choosing strains for master slants you should pick out mychorrhizal growth that is stringy as this has been shown to produce the highest amount of pins compared to the more fluffy mychorhizzae, which has been shown to produce much less pins.

tl;dr

your problem may be due to inoculating with mychorrhizae that has an intrinsically lower ability to produce pins (e.g. fluffy growth vs. the favored ropey growth)
