Shiitake Cultivation

I am interested in cultivating shiitake. What would be the best substrate? I was thinking about organic rye grain and hardwood chips. Would that be a good substrate? I was also thinking about colonizing in jars, and then using the jars to colonize a larger container of wood chips. Would that work? This would be my first time cultivating.

One other question, I have access to a large number of wood chips already, they have some plant matter growing in them already as they are outside. Would I be able to use these or would I have to buy a fresh bag? Thanks.

You may not get an immediate response on these questions because they have already been thoroughly explored in previous posts. If you would like to start your research whilst waiting for replies to this thread I would suggest using the search function with the word "shiitake" (plus substrate/jars/woodchips etc) and limiting results to the user Rogerrabbit.

One question that I do have that I couldn't find the answer to is:

Can you populate mycelium of mushroom species that require wood in a substrate that doesn't contain wood, such as organic rye berries and vermiculite. Once mycelium is populated, use that to introduce mycelium to substrate containing wood for mushroom fruiting? Or will the mycelium not even populate if there is no wood?

Yes -- this is standard practice.  The mycelia of wood lovers need wood to fruit, but will grow well on rye berries.

If you add to the rye a bit of fine sawdust from the wood you will use later in your fruiting substrate, the mycelia will be quicker to colonize the fruiting substrate.
