What are these purple spots? Is this mycelium or white mold? How do I distinguish between mycelium and mold?

Looks like it could be a bit of both. I don't see any purple spots.

I cut a new slice of the photo and increased saturation , as you can see some of the seeds on the top has a mild purple color, it's very mild.
How do I know if it's mycelium or mold? I smelled and it smells like something wet . When people say that it should smell like fresh mushrooms , does it mean like portobello mushrooms?
It has been 2.5 weeks they are in these jars, they stalled and didn't colonize all the grains (well I can see mycelium on all grains but not white like the top), it looks a little dry. Should I try to fruit outside and avoid spreading white mold spores into the air of my apartment (if that's the case)?

Or maybe try to grow some fruits directly from these jars?

That looks no good to me... You'll know the fresh mushrooms smell when you smell it but if it smells like it's "wet" then yep, go ahead and toss it. The mushroom smell is unmistakably mushroomy, no way around it.
If you're curious what I'm seeing that makes me think that, it's the way the grain is pressed against the glass, and the mold mycelium is filling in ALL of the empty space between the grains. There's no rhizomorphic growth at all (which isn't always necessary but helps when identifying), and now that I can see that purple tinge you're talking about, that's probably just the shadow from the grains/translucent mycelium, but could also be some mold spores.
Mushroom mycelium likes to start from the grain and go to the next grain, without much fluff, mostly colonizing the interiors and spiking out a few strands to reach the next grain. Mold likes to fluff like hell and then slowly work its way into the interior of the grain after it's covered everything in a swath.
This jar was clean but has that purple looking tinge between the grains:
 It was after a shake though so the growth isn't as nice looking as it was prior.

I see, if I have nothing to lose but toss it, can I test it to see if something will grow out of the jar ? so instead of doing the coco coir / bulk tek, can I just open the can and spray water on it and put it outside ?

That would be a waste but if you're that hopeful for something you've been told is mold then... I dunno, those efforts could be better spent elsewhere. It's not gonna get any easier to clean that jar out.
