Does a canning jar produce an airtight seal?

Does the seal on a closed canning jar allow gas or moisture to pass into or out of the jar? What about vacuum sealing plastic bags. Are vacuum sealed bags air and moisture tight, or do they allow gas and moisture to pass into or out of the bag?

A standard canning jar is not absolutely air/water tight, as the seal material on the lid is a sort of rubber. Rubbers and plastics allow for slow diffusion of moisture and oxygen.
However, there are more factors at play. Given the extremely small exposed seal surface area and the relatively think seal path the the oxygen/moisture would have to travel (compared to say a plastic bag or something), I would guess that the actuAL diffusion rates would be ridiculously low. This guess is backed by years of performance history related to food preservation, where oxygen is one of the archnemeses.

It would be so slow you wouldn't even notice it unless you came back years later

Well said agmotes. Canned foods remain good for years, hence, diffusion is virtually negligible.

I think it depends on if the contents were heated and under a vacuum its a tighter seal then if it was hand tightened. Canned food keeps its seal for a long time if stored properly, hand tightened jars with herbs seem to lack luster after a while.

that just means it was not fully sterilized and spores were not destroyed.
There is no way a mold spore is going to sneak into a sealed jar....
