Gourmet mushrooms similar cultivation as p cubensis

I have been researching mushroom cultivation and would like to try for Gourmet mushrooms before moving on to special mushrooms. Can anyone recommend a gourmet species that would be a similar experience to cultivating p cubensis? I am planning on using an organic brown rice flour/vermiculite substrate. Please advise on a gourmet species that would be a similar experience.

Looking at the Oyster mushroom cultures on Ralphster, there are several options. Any recommendations or just pick one and go with it? Thanks.

I just started with agar and the first thing I did was buy oysters from the Asian market and took a culture of it. I started off with cubensis and other than liking a slightly different substrate and not having rhizomorphsic growth they seem to be handling similarly- I will be innoculating with a wedge into WBS (Wild Bird Seed) which is also used for cubensis. up until spawning as far as I can tell they are pretty much the same.
