Production oyster strain

Could someone recommend a more suitable strain for my conditions and needs? I have been using the pearl strain from Fungi Perfecti. It is a great strain, but I can't get it to pin consistently where I cut x shaped holes in the bags. It forces me to cut the tops off the bags, which makes harvest difficult, and dries the blocks out quickly. I am using filter patch bags. The substrate is pasturized alder sawdust/chips, spent coffee grounds, a bit of rye berries, and gypsum. My fruiting chamber gets up to 80deg f on hot days, which is not by choice by the way, although despite my fears, the strain I'm using grew just fine at that temp. I plan to have better climate control by next summer.

So.. Basically what I need is a strain that:

1: pins consistently where I cut holes in the bags
2: Preferably has less problems with premature fruiting(mine start trying after 2 weeks in the bag.
3: can handle occasional high/low temp conditions.
4: is an aggressive commercial strain that does well on pasteurized subs

Other types of oyster I would consider as well. Pheonix meets the requirements, except the shelf life is terrible, so I'm pretty over it.

brown oysters blow.  like you said the shelf life sucks.  the fruits are fragile.  and they pin all over the damn place.

I don't have  alot of experience. But when I  grow  my pink oysters, when they reach about 75% colonized, I fold  the top of the bag over so it's tight against the substrate.  Then you can tape it down, or just turn the bag upside down to hold it in place. And I cut my holes and they seem to do fine that way.
