Problem drying

I fan dried my fruits until those bitches were crispy as hell. Snap tested etc. I read thoroughly about drying techniques so no issue there, but I put the fruits in an air tight tupperware container with a shitload of new silica packets and left them like 5-6 hours. Checked on them again and now they are no longer cracker dry and became all squishy again. I currently have them back in front of the fan, but I'm wondering why the silica packets didn't work? I used waaaay more then I would think is necessary. I know I know I'm getting a dehydrator soon, but for right now I'm trying to figure out why this fan dry/desiccant method I'm using isn't working.

They my have seemed dry on the outside, but the inside still contained trace amounts of moisture. Silica gels are meant to keep cracker dry mushies the way they are, by not allowing moisture in the air of the container to get reabsorbed back into the tissue of the mushroom. Dehydrators dry the mushies completely, and storing them with silica gels will keep them cracker dry as well as preserving the potency.

This is a common issue. They seem to hold some deep seeded moisture even when they initially seem dry. Just give them another round of the fan drying. Repeat until they stay cracker dry. This is why dehydrators are preferred.

Its hard getting mushrooms cracker dry with a fan. For bigger mushrooms it can take days.
Either: 1) They weren't cracker dry to begin with. 2) The desiccant packets had moisture in them from being previously used or were left out in open air.
But its probably a combination of both.

I air dry shrooms for days and then put them on foil in a tub with damprid spread across the bottom. Once they are cracker dry, I put them in baggies and keep them in the damprid chamber.

Yea I'm guessing it was probably a bit of both. I'm going to fan dry them again twice as long this time.

It helps to put them in the refrigerator while they're drying. The lower temperature increases the effectiveness of the desiccant. Just don't leave them in with the desiccant if you move it back to room temperature afterwards because some of the moisture will be released again when the temperature rises.
