What I need help with is figuring out how to keep the moisture on the surface of my mono. I'll spray it with the mister and all of the surface moisture will be gone within hours. Is it too much FAE? Bottom holes are stuffed tightly and top holes are loose. See my last pic of them, I haven't changed them. Should I tighten the top holes?

Spray a mist over the tub lightly. Not having a casing layer to absorb any excess moisture on the surface could result in contams down the road.
Keep the bottom holes stuffed tightly. The top holes should always be dialed in loosely, you want the humid, high CO2 air to be able to escape easily and not be trapped in the tub, which would create an anaerobic environment over time, and seriously affect fruiting potential.
A week into the fruiting phase and you should be seeing more pins by now. It could jut be bad genetics, especially if you started from MS. Just wait it out and see.

It will be 2 weeks in fruiting as of tomorrow and I've have about 5 pins so far, and the hyphae knots I do see are growing extremely slowly

So I've got some small little fruits coming up before the rest, and the pinset is pretty unevenly timed. I've been laying out the ones I pick on a plate and letting them dry and then putting them in a jar with some silica gel packets. I was gonna do this until the first flush was done and then put them all on the fan to dry at once. Is this a good idea or should I just go ahead and put them all on the fan right now?

You can get a food dehydrator at your local Walmart for like 35$ . Fan drying will not get them completely cracker dry. Potency will be lost in the process.
After 12 hours at the highest setting, they'll snap like a twig when you apply pressure.
At that point, you can go ahead and store in your mason jar with a silica gel packet.

Crank it all the way up. The highest most dehydrators go is 160f, which is wayy below the temp at which the actives start being degraded at. (350f+ I believe)

The fresh mushies are exposed to the elements for an extended period of time (light, moisture, and open air all degrade potency). Fan drying will take at least a couple of days till they're stiff and break easily. But even then, they may still contain residual moisture.
Using a food dehydrator wil speed up the process drastically, so your mushies will go from fresh to cracker dry in about 6 hours (at the highest setting). The faster you get them to that point, the less you have to worry about any potency loss.

The upper right corner of the tub is lookin green. That's trich. And it's why your tub is stalling out and not pinning. The mycelium is spending it's energy trying to fight off the trich but it will take over the tub eventually. Sorry dude. The tub should be trashed. Inhaling mold spores is no fun.

It has a light green color, so it can't be part of the black trashbag. If you can get a closer photo of it, that'd be nice, and would make it easier to identify. I had to zoom in all the way just to see it, but when I did I was like

Lol. But that green blotch is still there in the upper right corner and will continue to spread. It was most likely the result of unclean spawn. Gotta work on those sterile techniques in the SAB.
You should try out bulk for your next run. Get a bag of oats from the feed store and prep a shitload of jars, so if a couple fail it's no big deal. It's nice to have multiple monos running at once.

Cool, you won't be disappointed doing bulk.
You'll be able to get like 3x what you'd get off of a normal pf tek grow, if done right!!
Give the tub some time, you'll know soon enough.

I looked again closely with the lid off, I definitely don't see any trich, and there weren't any awful smells. Do you know what else might be causing this sporadic pinning?
