Dehydrators are awesome, and can be used to redry desiccant packets.
I only use desiccant packets after fruits are cracker dry to keep moisture from the air from reabsorbing into the tissue. When mushrooms are cracker dry, they will pick up water even in low humidity, so it's nice to have a desiccant pack in the bag or jar.

This is applies to storage, you do not want to do so until they are cracker dry.
If you are desiccant drying them then you want the container to be sealed as much as possible. Dessicants work by pulling the moisture from the air in the chamber, if the chamber is not sealed fresh air from outside will enter the chamber and the desiccant will waste it's power pulling moisture from the new air. The best desiccant chamber you can make will be as sealed as possible and have a small fan inside to keep the chamber air circulating and absorbing moisture from the mushies to then deposit it in the desiccant.
That being said, desiccant drying is sub par. Especially if you have alot to dry. You will have mushies start to smell funky when you have a few lbs of wet weight to dry in a storage bin with the bottom lined with damprid. Slow drying allows the mushrooms to begin to degrade, and possibly rot. I think people are far more likely to get upset stomachs after eating fruits that were desiccant dried only, as opposed to fruits that have been dried in a dehydrator in hours where no such decomposition is allowed to take place.
