OP, I'd let the mycelium colonize the casing layer a bit, it looks a bit thick.

I'm gonna let them colonize a bit then put into fruiting. Casing layer is right around 1/4" thickness so I'm hoping it will only take a few days.
I'll go the pasteurize route next time. I'll make sure to keep an eye out for any possible contams.
And I'm running B+!

I've never felt more proud
I do haz question though. Tub#1 started pinning when the sub was about 90% colonized. Tub#2 just got its first pins today and is roughly 70% colonized. Is this awful for pinset and is there a better way to keep that from happening next time?

I would suggest making sure there is no FAE (Fresh Air Exchange) while colonizing.
Will trigger fruiting.

I followed a posters advice and put them into fruit after my casing was 30% colonized. I'll wait til it's 100% next time.
And this was my first grow so I haven't delved into agar work yet. That's my next project!

If you cased it then that's fine, it shouldn't get to 100%. A casing is not for the mycelium to colonize past that 30%, it's to provide a microclimate. When you do a cake, for instance, you roll it in verm so their's a high level of humidity near the surface of the cake to induce pinning.
If you case and let it colonize to 100% then there was no reason to case. The reason we let it reach 30% is so the mycelium is exposed to fresh air, a pinning trigger that tells it it's reached the surface. The mycelium that ate through that 30% tells the whole substrate to pin because it's found a suitable climate. The 70% that's still covered has the added benefit of the microclimate which traps moisture, creating a high humidity environment. This is much like wild cubes where the mycelium starts underground and then pokes its way up.

That op pic looked like every tray I mixed with hpoo weird jelly and yellow. Kinda gross looking. Didn't smell bad though. Did it work out ok??

I would harvest them now, the actives stop being produced once the veil starts to break away.
