the purpose of high heat in an incubator is to accelerate growth. In life, atoms when given more energy (heat) move faster. Why do you put cheese in the fridge? to preserve it right? what happens to that cheese when its in there for a couple months? It spoils. Its colder in the fridge, but "things" are still happening. They just happen a lot slower. Your mycelium still grew, just not as fast.

btw, increase your heat up to 85.

the jars will be fine, lower temps just slow down colonization.
