Not finished colonization

Hey, I got a bag here which is 80% colonized but this took like a month and a half. Time is valuable for me here, and I cannot afford it to colonize 100%. Can i separate the rye from the already colonized bag, and do the next step of the process. Do you guys think it will work? I cannot think of a reason why i should not work. Please I need all your advice!

If you do not let it colonize 100% then you risk contamination
Since the mycelium never reached its full power level of 9000

Month and a half and only 80% progress. Is there a way i can speed it up? What might be the problem for this delay?

break up the mycel and disperse it through the bag, should start regrowing in a day and finish up in a couple more.

that long time makes me think bacteria, can you see water in your bag/on the outside of the grains
and the mycelium looks a little thick almost ice cream look?
