When are screlotia ready to harvest?

So I have a few atl7 jars and I'm pretty excited for the first harvest of stones. I didn't really record the date, but is there a way to tell when the stones are ready to harvest? I'm going to only harvest one jar at a time. But I'd really like to test these guys out.
Also, I opened the jars and they smell kinda like milk. Is that normal? Also a little sour, but not bacteria sour.

Opend some at three months .. A little weaker than cubes but boy did they make me puke

the first time u smell stone producing myc, assuming its healthy, its weird, but u won't forget it. definitely distinct.
write dates on ur jars dude, only takes a second 
enjoy the stones though. took me many months to ever eat cubes again after my first tamp experience.

Is there any distinct signs that they would be ready? They grow so strangely. THe mycelium grew uo the sides of the jars and are making stones on the glass. Some of the stones are even ripping apart the substrate.
Anyone know any info on how exactly stones are made, and like structural differences between them and mycelium?

They are an aggregated hyphal structure that forms just like stromata do but the difference between stromata and sclerotia is the presence of fruiting bodies like clamydiospores or conidium.

Im still learning the biology of sclerotia myself otherwise i would explain more.

Stones forming on the glass is normal. That is where most of them form. They look like they are "ripping apart the substrate" because the sub is shrinking. Wait at least 3 months after inoculation before harvesting.
They do smell a little different. Like really old stale mushrooms to me. They should be good as long as they don't look or smell contaminated.

I was kinda grossed out the first tamp stones I harvested. The grain was all dried out and orangish kinda.
The stones were pretty tasty though. Kinda reminded me of a mix between pecan or walnut and an almond.
