Reboot, need help on picking type of mushroom

I first ordered a lc of pink oyster very early this last winter from one of shroomery's sponsors, only to get a syringe of dead lc and a notice saying their contact email server is down indefinitely. Never could get a refund... Such mad.
Anyway, with the big summer heat almost out of the way, I would like to reboot and try again (BTW, that was my first time trying. I have near to no experience on growing mushrooms. I do, however, have all the supplies for the pftek method.)
However, I would like to start with something that fits the climate. I will be growing indoors, and will have a heater in the room, but would like to use it sparingly. Fall/winter temps for my climate range around 50-70, and with a heater, can easily keep it in that range. Humidity is freakishly high right now, but towards winter this changes.
So, with that said, what should I start with? Pink oyster may still be what I go with, but I have forgotten a lot, and so I so i cant remember if that is a good choice anymore (will be doing a lot of refreshing reading). Flavor isn't too important, so long as it is bearable to eat, and possibly cook with.
Just want something that fits the temperature range, and is semi easy to grow.

I would start with the Pearl Oyster (Pleurotus ostreatus).

Pearl oyster is good. Or if you can keep it around 50° for fruiting, king oysters would work. Pink oysters like it a little warmer.

50F? Would like king oysters as well, but the temperature here can vary significantly. Heating a room is much easier than cooling it. (I'll be growing in a 3/4 finished part of the house. Insulation, walls, paint, etc are up, but no central heating/cooling.)
Might try that after the pearl oyster/when the weather cools down even more.

I'd go with pretty much any oyster other than pink or gold. You can grow lions mane in those temps too. It is also pretty easy to grow. I wouldn't use PF tek for edibles though.

Well, I have everything needed for the PFTek method other than the LC/Spores, so I am pretty much limited to that. I will also be growing some exotic species (That are recommended to be grown via PFTek, thus the reason for having it all)
I assume you say it isn't a good idea because edibles require a lot of substrate?
