maitake grow rate

does anyone have a referance to how long it takes for maitake hen of the woods to fruit?
i am hoping to supply a local resturant with maitake but i am unsure how long it will take to fruit the maitake.
i need to know how long it will take because summer is almost over and if i grow a huge amount of bags of hens i need to know if they will fruit before i have to bring them in from outside in the garage. i am hopeing most will be fruited by the time it gets cold so that i do not have too many straggler bags brought into the house.
i just dont want to grow maitake for them to get too cold. i am located in new york so it gets pretty cold pretty fast.
the sub i am using is 2lb of rye colonized transfered to about 4lb of sawdust.
i need to know how long it takes to colonize 2lb of rye from spore syringe. and then i need to know how long it takes for 2lb of colonized rye to colonize 4lb of oak sawdust in a bag. and then lastly how long it will take for the hens to pop out and finish up the growing cycle.
also how am i to know the hens are done growing? will they go from white all over to brownish when the sub is all flushed out of nutrients? i have seen pictures of hens that go from white to brown but i am not sure if thats because they are done growing; the sub is used up; or if its getting late in the season and the cold is killing them. i am not sure.
i am hopeing to do many bags so that i can supply the resturant in bulk.
also would it be a better idea to do a test grow to see how long it takes; but the only downside to that, is it is the end of july and the garage will begin to get cold in about a month and a half in late september.
really dont want to invest alot of money into hens if they are all going to get killed by the cold before i can sell them.
in a nut shell; does anyone have a referance page specifically for growing hen of the woods in bags (including fruiting time frame)?

you could pull it off but it sounds like you still have some learning to do before you go balls to the wall...trying to grow something most people have trouble with, no less. the reason they're so expensive is because they are finicky. they take a long time to incubate and pin and fruit. and after all that trouble the yield is usually pretty poor. you would be lucky to get over half a pound per bag.

Maitake season is fast approaching, with Fall just around the corner. You can easily stumble upon 30+ lbs of wild Maitake growing from one dying oak tree alone.

Another thing I forgot to mention. That if you start now you'll end up harvesting in the peak of wild maitake season. THat is not good for business.
