Grow room is falling apart

Had my first flush a week ago and everything has been shaky since. I have six logs in there now, all of which were inoculated at the same time, but had wildly different colonization rates. The straw logs are producing way more mushrooms than I imagined and at a much faster rate. They go from pinning to full developed fruits in less than 3 days. Everyday I have a fresh batch of mushrooms but I have absolutely nothing to do with them, so they just sit on the log to turn yellow and crumple. I picked at least 10 pounds the first day, all of which I crushed attempting to cram into my fridge, where they've been untouched for more than five days now. My family ate some, and loved them. And I've also been giving out bags full to coworkers, one of whom passed them along to a restaurant who would now love to buy some weekly.
I got so far ahead of myself. I have a 5 gallon bucket full to the brim with fresh oysters that are going right to compost because I can't do anything with them. The manager of the farmer's market said she would love to have fresh mushies and that I am definitely allowed a table on Thursdays and Saturdays. My problem now is that I have 8 logs innoculating outside my FC. I'm guessing they'll be pinning Wednesday/Thursday next week. Well I'm going away with my family next Thursday and won't be back until Sunday. No idea what to do about that.
Also, there are pools of dirty water all over the floor. Lots of particulate matter suspended, may be spores. No idea how to clean up. The problem is that the only way in and out of my basement is through a staircase that runs directly through the central living quarters of the house. I don't want to be running contaminated waste through there. The big tote full of water that is housing my pond foggers seems to be turning greenish, but I can't really tell. I also had a small humidifier running but the air vents were completely caked with spores, so I just got rid of that for the time being. The exhaust duct is also crusted with spores. I have a few spent straw logs. No idea if it's safe to carry them upstairs and through the house outside, or if they're laden with spores also. Negative air pressure is sucking the poly sheeting inwards and all of the typar tape is peeling up.

Necessity is the mother of invention.
Sounds like you need a revamp of your growroom. Also a dedicated produce/spawn fridge or two doesn't hurt.

I still feel much ambiguity surrounding the danger of spores. I can't get a handle on how easily they travel and in what concentrations they are hazardous. It keeps me up at night. Like I'm just counting down until my family becomes sick.

Holy fuck! Start dehydrating them! 
Dried oyster reconstitute amazingly and people buy shiitake and oyster dry all the time so they dont have to eat them right away.
Thats a problem when you first start, problems arise and you have to make adjustments to cope with them.
Put the spent logs in trash bags and they will be safe to remove. Run an air scrubber 24/7, use a shop vac for the standing water, change the water reservoir for the foggers once a day, scrub the reservoir once you empty it, spray with 3% hydrogen peroxide, let it sit for ten minutes, then refill it.

if i can offer you any advise; harvest even if you are going to throw them away. if you let them rot then you attract bugs which are real hard to get rid of. plus you can always wait for another flush.

Sounds like your on a awesome track. I wish I took the straw route but my wife knocked down the idea of bales in the garage and the bugs they can harbor. I also wanted to use a free local source of substrate for the green factor. Get all your paperwork and training down to be legit for local and farmers market sales, make a company name as a sole proprietorship or llc and start making sales. Insurance isn't a bad idea either to protect you from loosing your house if your product is contaminated and gets someone sick or hurt. Sounds like you also need to invest in a dedicated fridge near your grow chamber and make a large food dehydrator. Also some stacking produce trays or boxes are good for keeping the fruits from damage.Although you should check local laws about mushroom sales. I know I can't dry or process in TX without a food processing licence.

you are going to need insurance to sell at most farmers markets in new york. expect to pay 300-400$ for insurance.

Yep, thats what I was quoted. That was a years worth though, so 25-35 bucks a month.  Still haven't gotten the insurance yet though, but I'm lucky my farmers market doesn't require it.
Also, If your oysters are flushing too fast for you, try a different strain. My main blue oyster strain is from Everything Mushrooms and pins 11 days after spawning, and is ready to pick in another 4 days. It's a beast but it can be hard to keep up with. My Steel Blue culture, however, pins in 21 days with the same method, and takes a little longer to mature, but the fruits are a higher quality.
Find what suits you and go from there.
