Central Florida?
You live in an awesome state for wild mushroom hunting!
Florida Panaeolus cambodginiensis Panaeolus chlorocystis Panaeolus cyanescens Gymnopilus luteofolius Gymnopilus luteoviridis Gymnopilus luteus Panaeolus cinctulus Panaeolus fimicola Psilocybe caerulescens (very rare) Psilocybe cubensis Psilocybe mammilata Psilocybe tampanensis (Found only once in recorded history)
When I lived in the northern panhandle of Florida we would collect stropharia cubensis from fields where bos indicus cattle could be found. Stropharia cubensis could be found nearly year round just slightly north of the town I lived in. Stropharia cubensis hunting was my favorite activity at the time. Any way, here's a link that describes cubensis hunting in Florida

Psilocybe tampanensis was found in Tampa Florida in the 1970s, though it has not been reported there since, I know it's been found in Mississippi, but that would be an amazing find both for mycology and the lucky person who gets to sample such a rare fungus.
Psilocybe weilii grows in northern Georgia, it's only found there, but recent anecdotal evidence provided by a friend who had the privilege of consuming this species has given me much interest this particular mushroom. For you it would not even be that bad of a drive, May to December is its growing season. I've heard amazing things about this species.
All just suggestions, you really do live in a good place for psilocybe fungi, the gulf coast, the southern United states and the Pacific northwest are prime locations for this type of thing.
