How do cops conduct investigations

So say you did something illegal and they knew about it, would they most likely bust you then and there or would they just watch you for long periods of time and just add up a bunch of different charges.

Completely depends on the circumstances at hand.
Are you a high ranking mafia member? Are you the lowest of the low drug dealer selling $5 at a time?
If they think you're a "big fish" they'll just watch you and catch you with your pants down. Figuratively speaking, of course. But perhaps literally.

If they have a search warrant they will usually execute that asap. If they have tips and loose evidence they will watch you until they have probable cause for a search warrant. They can also bust someone you know and try to set you up with a snitch. Generally they need hard proof to enter your house.

i had friends moving a bunch of weed from cali to baltimore and they were watched by law enforcement for nearly 2 years before the raids came down and shit

Not sure how well this relates to your situation but there was a dude in my town (a college town) who got roped selling molly to undercovers. I guess someone informed on him and the UCs made two separate buys of a gram each before they busted him on the 3rd sale.
Idk how well they investigated but im assuming not much was needed because he made all the sales on campus in a parking lot.

As long as you dont repeat said "illegal activity" again in front of this person you're probably alright. Unless its been ongoing for awhile. Im gonna assume your situation is drug-related based on your answer but i understand if you dont wanna discuss.

Just out of curiosity, do you think the police would want to watch you just because your known to be out-spoken on the issue of psychedelics? I talk about the chemistry of these things and how it relates to neurochemistry and mysticism as well as the philosophical, psychological, and spiritual implications of the psychedelic experience, all the time, and I talk about these things with everybody and publicly, but I never talk about actually using psychedelics, or buying or selling psychedelics, only about all the fascinating things related to them.
I do however study their chemistry and I know I have lost notebook pages detailing the synthesis of several of these compounds, but honestly it's all notebook chemistry and perfectly legal, I'm never in an actual laboratory and the work in these notebooks requires expensive and complex lab equipment only available to professionals and universities. I simply love to calculate new synthesis work-ups for known compounds, either entirely new routes to synthesis or adjustments improving known work-ups, but it's all in the notebook and thus theoretical.

Even if they did search my home they wouldn't find anything, I'm just curious as to whether the police actually take the time to monitor known freaks, and even though I'm doing nothing wrong, the idea of police spying on me would make me uncomfortable, plus what a waste of time. I really hope they don't waste tax dollars and time spying on intellectual freaks with interest in entheogens, specially when there are real criminals they should be dealing with...

They can watch for long periods of time or they can bust on the spot, it depends on what they are looking for. If you think you are being watched, cease all of your questionabl activities at once and just chill for several months and go on about your business.

This guy was busted for manufacturing MDMA, he details his experience in the story in the link above, he was part of some now defunct online forums where he would post about manufacture and things related to it, though he specifically says the police never mentioned his online activity.
I'm not sure though, I'm sure police monitor and post and sites like this all the time, though I don't see how it wouldn't be a complete waste of time and effort.

one thing, through the use of XKEYSCORE, the NSA have the ability to sift through online forums such as the one we are on right now. The NSA are also known to have traded information with the DEA in the past.
