Hey fellas. This run has just had me pulling my hair out. Below are pics of three subs. Humidity/FAE issue? Contams? Coir/coffee subs, WBS spawn.

Looks almost like PE blobs.
What variant are you growing? How long has it been fruiting? What is your setup and how are you ensuring adequate humidity and FAE?

1 Brick to 1cup coffee
Variant - South American cubensis Fruiting - 24 hours at this point. Setup - Mini tubs in a shotgun chamber, Perlite in box. Fan every 5-7 hours.

I know what you did wrong. You spawned your tub with bacteria instead of mushroom mycelium. I bet all three smell like sour apples.
You won't get anything from those tubs. Toss em and try again.
....actually, you might try to keep the bottom tub to see if anything happens, but toss the top two.

He took the pics of open tubs. I'm sure I hope he'd have noticed any funky smell.

The perlite is useless with that setup it can't do its job

Well for 1, bacteria laden spawn/subs will still produce flushes. Albeit retardedly diminished yields, I have yet to see a bacterial contamination cause no fruits. Contamination molds like trich and cobweb maybe, but I still will see fruits.
Secondly although I can see metabolites and the cottage cheese look, those spots look more like mycogone contamination or something similar. Honestly wouldn't use those.

I hope you properly prepared that coffee before adding it to the substrate.
If not, that is why the tub is contaminated like a motherfucker.

More info on this grow attempt: No sour or off smell, just mushroomy. More metabolite/yellow ooze on top two pic bins. Substrate was Pc'd at 15 lbs for 90 mins, cooled, and left in sterile conditions until ready to mix. Left in incubation at room temp-which is around 80 here right now-about 10-14 days, covered in foil and medical tape for minimal FAE, according to TEK. Edited to add-I'm co-cultivator on this grow.

According to what tek? Because you'd never see anything close to that sort of information from within the last 5 years.
Temps should really never go beyond 75. No need for "incubation", otherwise it's a breeding ground for contaminations. Also you pc grains. Bulk subs and casings get pasteurized. Grains are best inoculated with CLEAN agar wedges or liquids (not vendor syringes or prints), and I'd recommend upping the pc times to 2 hours. Look up a proper pasteurization for bulk substrates that aren't grains.. unless that's a tray of grains it should have been pasteurized.

We use a slightly modified 6qrt dub tub tek "fan and mist", or "Zombie tubs." It recommends pc'ing the substrate in an oven bag at 15 lbs for 90 mins. As for incubation, I only mean that we put them in the closet of our set-up room to spawn. The temp is something we currently have little control over. It's just hot here right now, and that's average room temp. I do know that temp can cause issues, as well as humidity, since they have been the biggest obstacles we have had until now. We also have had some nasty run-ins with trich, which is why we aren't doing straight mono's, since they always get over-run with the stuff before we even get fruiting. I'm leaning towards it being mycogone, but I have yet to find any info that has it showing up BEFORE fruiting, and we don't even have pinning at this time. Truly appreciate all the help. Edited to add: We have had successful grows, including a very successful season last summer. This just has us stumped. :/

I'd suggest ditching whatever you're getting your information from and following the stuff on this forum.
http://www.shroomery.org/forums/showflat.php/Number/17897163
There's a guy named Pastywhyte who commented in this thread earlier. In his signature it says easy agar tek. That's another sweet place to look.
In my signature there's a link saying improve your sterile techniques! If you don't want contamination anymore, and don't want to have to keep guessing what you're doing wrong, hit up this shit. Work on everything, right up til the inoculation. I didn't do agar for the longest time. I've had an amazing difference from it. Plus you get to feel like a mad scientist :P
