Friend of mine found this ten pounder running through the woods today. We cooked it up with some of our buddies farm vegetables: onions, collard greens, garlic, and herbs.
We also made a cream reduction and ground up some of the chicken to put on bread.



Quite delicious overall. It really does taste like tasty chicken! Turned out to be a little dry. Any suggestions to get them to be more moist / tender or does it depend on when it is harvested?

for the parts that are a little tougher and fibrous a long, very wet sautee in a lidded pan will soften them nicely.  by long i mean like 30+ mins.  just keep trying them to make sure they're the desired texture.

combo of a little butter and water works well--check the pan often to make sure it doesn't dry out--and at the end you can take the lid off and reduce the juice into a tasty sauce.  finish it with a little salt, a little more butter, pepper, and a hint of oregano to add some depth at the end.
