Does anyone know of a way that I can still stream music and use the internet but not receive any calls or text messages?
I'm tired of feeling like a rat with a dopamine buzzer.

My phone has an option where I can change how calls are handled, so for example I can set it to priority calls only and only people I have marked in my contact list as IMPORTANT ring through, all else just get immediately dropped to voicemail. It also has a "none" choice and when you select it it brings up a second option of a date time to reenable, or indefinately. So if I was taking a much needed nap or in a meeting I could tell it not to let anything through for an hour, or three hours, or indefinatly until I manually change it back
For my phone just hitting the volumn up/down button brings up the volume slider on my phone and the non / priority / all choices pop up right under the volume slider.
This is on a Nexus 4 (google phone) with the stock lollipop OS, not special apps or rooting to do so.
I *THINK* this is what you are asking for or will assist with your problem.

That's helpful, but I'd like to entirely not get any calls at all. Or just have my calls go straight to voicemail and not get any notifications, or just have messages in my inbox but no notifications.
I just want a break from my cellphone, but still be able to listen to spotify, podcasts, and the internet.

Remove the Sim card when you're just listening music.

I think you're being far to specific in your requirements, of a device that is designed for those exact things. Maybe you should get a tablet, or some other hand held device that isnt designed to be a phone first, and then it might be easier to just not use it as one, but tstill have the dataplan running so you can surf or listen to tunes, etc.
Years ago it would have been much easier to find you a solution, but now a days just about any smartphone sized computer is just designed to be a cell phone Where as some years back you could easily get a "PDA" for example that was the size of a smartphone and did all the app stuff over and could even use various internet connections, but was NOT a phone. Now there just is no point making a smart phone functioning device that isnt actually a phone.
I suggest you search google, because I wouldnt doubt somewhere there is a setting you can enable/disable to cause your devices phone parts to be disabled or turned off, whlile leaving it as a computer like device. You can justr put your phone into 'airplane mode' and that will cut off all your calls and stuff, but it will also cut off your cell data as well.

Change yur phone number and don't give it out and forget you have it. or you could cancel your phone service and get a hotspot, there are prepaid hotspots if you don't want a contract. There are also tablets with 3g/4g, something like that might work for you. I have an old pantech element, it was water proof too before a cover for the micro usb port broke off, it has 4g which I've never used, it's through att and can be prepaid, you can get them for $30-50 on ebay.
