I'm still a total noob butI think you generally want to use them shortly after they cool down.
I've only been researching for the last 2 months so someone else more experienced will likely chime in.
But I did read that leaving them sit for a couple days is not a bad thing because you may spot contamination before even inoculating the jars, and you want to make sure they've FULLY cooled from the PCing.
My first grow may get started tomorrow evening (awaiting spores) and I plan on PCing a spare jar just as a control jar. Meaning it will not even get inoculated, just want to make sure my PC time/technique is good.

A grain jar can hold for a week or so. Wait too much longer and you run the risk of it starting to dry out making colonization difficult.

I have inoculated jars months after they were prepped and I have PF and WBS jars sitting in drawers with no signs of contamination after nearly a year (I'm kinda lazy )
This doesn't mean that it's ideal though. Within a month you should be fine.
