I came home today, after misting and fanning in the morning (8 hours ago) and many of my mushrooms look like this! What is it and what should I do? This black slime is also present on some of my other cakes in the FC

its lack of fae. either you didn't raise your sgfc enough so air cant come through the bottom or perlite has clogged your bottom holes. you can use a pencil or screw driver and poke through the bottom holes to move clogged perlite.
1/4" holes 2" apart in a grid pattern on all 6 sides right?

yeah! weird! and its elevated at least 4 foot off the floor. I just rehydrated/ fluffed up the perlite a few days ago and poked holes! crazy. It is in the basement so maybe air is stale there. Can I save the cakes? Should I let them air outside maybe?

but is the chamber elevated off whatever is holding it 4ft from the floor?
if you misted 8 hrs ago that water should have evaporated by now with decent fae, looks like you're getting closer to none..

if you get them dry I would eat them only mist when its needed, as in you dont see any glistening from the cakes anymore and the verm looks lighter in color when its dry. if you keep them wet this is what happens. sorta would have thought that the sgfc has too good fae for this to happen after 8 hrs tho!
tried elevating the sgfc by 4 jars/glasses, 1 in each corner?

Probably a bad case of bacterial blotch due to a lack of FAE like mentioned. Normally a slimey coat and browning/blackening on the fruit body is bacteria.
Quote:
Bacterial Blotch %u2013 Pseudomonas tolaasii (P. fluorescens) Yellow to brown lesions form on mushrooms. Typically, spotting occurs at or near the edge of mushroom caps. Blotch occurs when mushrooms remain wet for a period of 4 to 6 hours or longer after water has been applied. The bacterium is spread in air-borne soil particles. Controls include lowering humidity and watering with a 150 ppm chlorine solution (calcium hypochlorite products are used since sodium hypochlorite products may burn caps). If the mushroom stays wet, however, chlorine has little effect since the bacterial population reproduces at a rate that neutralizes the effect of the oxidizing agent. Shiitake caps are affected by a bacterial disease caused by Pseudomonas gladioli (Burkholderia gladioli). Sanitation is a critical component of control measures.
If you can dry them you should be fine but it can lead to a nasty case of food poisoning, better to not risk it.
