You really want that extra time, if not a week at least 3-4 days. One of the triggers for fruiting is nutrient depletion, and what you're doing in that week is letting the mycelium colonize the inside of the cake.

This not only helps tell the fungus to fruit, but also strengthens the cake, and acts as a further protection against contamination. I know waiting is tough, but give it a little more time. This hobby rewards patience.

Letting it colonize forms the knots after it's completely expanded which forms the basis for your pinset. If you take it out early it will still take the time developing knots but it's no longer in it's most ideal environment for it so it may not happen as quickly or efficiently.
