Whats the best way to cook steak??

THE best way is gas / charcoal grill
But i got neither of them, i got a double plated "no fat" grill , u know the one im talking about, anyway last time i cooked steak on it, even after hammering it with a wooded hammer it came out hard stiff and no flavour
Im think i should try frying it today

Cooking a steak on a George foreman? FAIL
Get a cast iron skillet and put a little olive oil in it. Season your steak with salt and pepper and put it in the pan. Let it cook on each side for about 2 and a half minutes and add butter and fresh garlic at the end. It makes a pretty nice sauce.

cast iron is your only good option, if not that, then your steak will be unevenly cooked unless you wanna do some like chicken-fried steak kinda deal, but if not, well, then i hope you can get a good browning on it, and cook it through enough without going over, or else you could use the oven but it would suck the life out of your steak for sure, unless it's perfect temp and timing, and plus you want that browning, caramelization.
so the best way would be frying it in an iron skillet, or otherwise even cooking pan and good what the fuck lol cook the everliving shit out of it with some butter spooned over it, to maintain moisture, and give it flavor and mouth feel succulence.

At least, don't close the lid. Just cook it on the bottom. It won't dry out from being compressed.

sure you might be one of those people who say "just s and p and that's it", or maybe you're one that says "the meat can speak for itself, no seasoning" or maybe you say "the crust/bark is the best part" or "low and slow, with smoke" or some like i like it all ways including "i want it to melt in my mouth and taste of herbs, butter, clean and fresh."

If you have a fire pit you can put together a make shift bbq.
-First get the metal rack out of the over. - now set up some bricks around the fire, or enough just to hold up the metal rack. - add wood and or charcoal. - enjoy your new and maybe free bbq

why oh why did i Google leather steak. it wasn't even worth it, there is surprisingly good steaks

aged and seasoned and grilled.

french style (i had to get a smaller pic, this is more provincial style than fine dining, but either way)

thin cut greek style ( or mediterranian style, just use skewer's and hot coals, marinade that shit and then stick it all together.)

he said best way to cook steak, not different cuts of beef. how many steaks are there that differ in what size you cut them? you cut them always the same size, or if doing different style then thin slice. but a big ole giant T-bone steak might require more time more requisite managing and care, but it's still cooking it one way, practically. either good or bad.
unless you wanna make your steak ultra tough, there is no real avenues here. unless you're cooking with flame, but the dude says he don't have access to fire so....

1. You have to take a very sharp knife and remove the excess fat and bones 2. either marinade it or take it directly to the grill 3. The grill has to be scorching hot so you hear the pssshhhhh when you put the steak 4. Don't touch until the steak is 75% cooked the way you like you 5. Flip the steak for the final 25% 6. Flip it around twice to get the X grill shape printed on the meat.
Enjoy

Nice primal cooking porn pics~
OP if you NOT using a grill Do what most of us said,
Let it sit while you season n marinade it, let it sit for about 10mins while the stove heats up
Rub the seasoning n marinade in both sides while stove is heating up use alittle oil on the stove top, make sure it sears when you put D steak on it
cook til its done, and let it sit 5 mins ANd eat

Yeah, it best thrown on when the steak is room temp 10-15min is my usual time though,
Lately though, I have trouble eating steaks that once blew my mind with flavor, Its just the whole texture of it nauseates me
But I still know how to cook a steak, cause I do it the same way I have been taught years ago, simple tastes good fun to cook

There utter SHIT. They have these chemically infused coals and a chemical paper on top which u light up and lights t he rest of the coal.
The whole thing stinks and very toxic and dangerous to your health.
I used the thing couple of times, last time after frying bacon i threw up. Complete shit trays, i cant belive theyre on sale

Give me a newbie guide to wood BBQs
I have some wood in my supermarket but im not sure if it was infused with chemicals...
Where do u put wood? What kind of BBQ oven u need? Will the traditional "round" one work? How do i light it up??

If I were cooking steak I would let it sit in a freezer baggy full of seasoning sauce after tenderizing it/scarring it.
If drying out is an issue, try marinading it with Mountain Dew. Seriously, that stuff is amazing on turkey and chicken.

cherrywood is an obvious choice but you could go with any verity of your sense and taste's. here is an easy google search for you
http://bbq.about.com/cs/cookingtips/a/aa051097_2.htm
best kind of BBQ would be a wood-smoke BBQ, one with a pit in it to withstand very high heat would be the chassis of the operation.
but like the man up there above said ya best to cook it in a big pit, with lots licking flames, bearing on the them meats, just touching them.

I remember back in 2005 i used to work at a 5 star restaurant hotel as a chef de partie...
There was a summer festival in july , hotel was by the river and head chef put me right outside the hotel by the river to cook ......... BURGERS
I had a "Grim Ripper" gas BBQ set and a girl next to me to handle cash... in about 3 hours we sold over 300 burgers
Those gas burners were the shit, maybe not as good as wood but still, burgers were top class

i would like to take a patty so big
and then put some Motz or Parm (or Blue if that's something i wanna indulge in which i don't really do) inside them and then wrap the side in bacon (applewoodsmokedbacon) so i can compose it on a pronged stick and hover it over the fire of wine wood and compose nearby a soup of onion and cheese and mushrooms. put the buns right at the side of the coal with tongs careful not to burn my hand or arm, and i carefully attend to them just at the end when the cheese is starting...burst...out of the burger patty that's drizzled with it's own juices and now a creamy fine line of some cheese melted to liquid state and oozing.
prep, prep fire, cook, and assemble.

i didn't specify, ok, well, i didn't specify the soup either.
well you'd have either have as good burger buns as you could find or you'd have it on Sour Dough for simplistic but flavorful, or a Rye or even have the open face on with butter and Pumpernickel. you could have it on a Pretzel bun!
but the more bold the flavor from the fire, and you'd have to avoid charring, any bit and you'd throw it right off, unless it was already at the end. watch for two minutes, and it's done.
and the onion soup i'd do it up with mushrooms (Morel's) and stock and salt pepper and then i'd need a blow torch for the cheese on top when it's done. little parsley. basil. viola.

son of bitch.
Blue Hill at Stone Barns
http://www.bluehillfarm.com/dine/stone-barns
Suck it bitches. It was unbelievable. Flight of wine with the meal. I've eaten there a few times and their prices have gone through the roof lately. 4 of us about 2 grand. This time it was on somebody else's dime because my wife did them an immense service even though she wasn't on the commission list. Still immeasurably great.
I have made very nice steak in a skillet before. Obviously the preference is for a charcoal grill over pretty high heat. Almost every oven has a broiler. That is better than a skillet.
Here is a spiffy little trick that will make your steak much better. About 4 hours before you are going to cook it salt it on both sides and wrap it in plastic wrap and let it come to room temp. When you are ready to cook unwrap it and sprinkle it with coarse ground pepper. Cook to desired doneness (not more than medium rare. More than medium rare is for morons.) When it is done wrap it in tin foil and let it rest for 5 to 10 minutes. It will continue to cook a little bit but the juices will consolidate. The only steak I sauce is filet and that is only with Bearnaise sauce and only because the cut is rather lacking in flavor. It is not my choice of cut. Porterhouse, T-Bone, Strip and bone in Rib eye are where I go. Cheaper cuts may need marination. London Broil, for instance.

Well the most important thing is to start off with quality meat. Krogers has sales on ribeyes all the time but they are far from really good quality. A good steak should just need salt and pepper.

I didnt read the thread but I know everyones basically going "you gotta get it at a perfect rare with nothing else on it for the best steak" in their best inpression of Ron Swanson. Some one probably brough up A-1 sauce which was met with horrified gasps and accusations against their manhood. Then theres the snob or two thats going on about how awesome kobe or porterhouses are admist all the pictures of steak.

I don't know who this Ron Swanson is but he sounds like he knows what he's talking about. However, nothing on it.. no. Salt, pepper, a little butter.. some olive oil.. maybe some garlic and a tiny bit of thyme. Fuck yes.
A-1 just completely overpowers any good steak.
But yeah, if you like well done steaks, then you pretty much have to use A1 because you just fucking ruined any flavor the meat had and turned it into chewy rubber.

I was in Japan last year, I can assure you it is not a scam. REAL kobe beef (from Kobe, Japan) is fucking so ridiculously good it's orgasmic. Most of the "kobe" we get in the US is not the genuine kobe beef. It is a scam.

I just edited my post and added that little factoid. The vast majority of "kobe" beef in the US.. is not real genuine kobe beef. Chances are you wont ever see real kobe beef in the US unless you work / dine at some super fancy 5 star restaurant that gets the shit imported in. Prior to a year or two ago, it was basically impossible to even get real Kobe beef in the US. Now it's a little easier. But pretty much everything you see sold as "Kobe" in North America... is not. To actually be qualified as Kobe, it has to follow the strictest standards. So yeah, Kobe in the US is pretty much a scam. http://www.forbes.com/sites/larryolmsted/2012/04/12/foods-biggest-scam-the-great-kobe-beef-lie/

It is a cut. Like Rib Eye. Kobe is a breed of pampered cattle from Japan. You can have a Kobe Porterhouse.
I know what a porthouse is ya knob. Just never been a fan is all. It's all about that sirloin.

Filet mignon is the best cut for tenderness. Porterhouse for grill and fire. Rib Eye is the best of both worlds, i'd say. great for grilling and fire {or charcoal} and more tender than a T bone; which i think would probably be better for a rustic texture for fire.

I judged a cook off once and got to sit in with this guy who won the World Series of steak cool-off and asked him for tips. One big one he'd told us was that you need to let the beef rest to room temperature before seasoning. Apparently it works amazing because I won't cook a steak anymore without doing this.
Also just salt fresh ground pepper and then get a good sear on both sides and then render the fat. After that add clarified butter to the pan with a bundle of fresh rosemary and a clove of smashed garlic and baste the ever lovin shit out of that steak until it's mid rare. Never go over medium rare. It's a crime to steak.

Yes... letting the beef rest to room temperature before cooking it is very important .. there is some science behind it.. but I forget why. I always do it though.
Almost as important is letting the beef rest after cooking it before cutting into it.

No, it's science. Letting the steak rest after makes sure it doesn't bleed out all over your plate.

Try my tip about salting it and wrapping it up while you let it come to room temp. This dries the surface so you get a good sear.

We baste the ever loving shit out of our steaks with the butter/garlic/thyme/steak juice mix while it's cooking. It's already juicy as fawk But yeah, you can pour it over, (actually we do.. we pour all the pan drippings over the steak ) but it's better inside the steak, imo. You can dip the steak in it or whatever, but steak isn't exactly a sponge. All it takes is like 1-2 mins of resting and the majority of the juices will remain. That's how most of the fancy steakhouses do it. But I'll try it sometime.. for science.

I wish I would've known this last night before I made my fucking steaks! I'll check it out this weekend for sure. Does anybody season with anything other than salt and pepper that they really like/recommend?

Only perverts baste a steak while it's cooking. You might as well boil it.
Do you really not let them rest? I'm telling ya when you take them off the heat wrap them in foil and let them sit for a few minutes.

I'm pretty sure I was advocating letting the steak rest after cooking it. That's mandatory in my book. Only a heathen would cut into a steak fresh off the grill or pan or whatever. You gotta let it rest at least a couple minutes.
Hence the:
Quote:
Shroomism said: Almost as important is letting the beef rest after cooking it before cutting into it.
I said 1-2 minutes but that's for impatient fucks.. I usually let them rest about 4-5.
But whatchu talking about willis? Basting a steak with the butter/garlic mixed in its own steak juices while it's cooking is fucking amazing. That's how I like mine anyway.

it takes a minute to set up my trappings, and it takes a minute to trim the steak if need be, it takes minute to chop the garlic and get it into the already ever-heating element, that you start three minutes ago, and it take less than a minute to cut the butter, you apply to hot pan with garlic, all within essentially the same minute as the garlic.
searing the meat takes a couple minutes. (remove garlic, set aside)
then you can eat it then if you'd like, and experiment. stop being such a worm and learn to cook a goddamn steak, or else i'll kill you dead sideways with anecdotes about me and your mom and the particular "steak" she likes.

you don't have to a gastronomic giant to learn how to make even a tiny bit of effort on your steak.
this thread is a subtle elementary place to learn, i mean, let your meat rest, you don't do that? it's the pinnacle of protip.

Tastes like good meat and smoky things. Your steak must suck if it tastes like cardboard. No wonder with all the 'erbs

smokey things, you mean browning or a sear; or do you grill? is it juicy, when you cook it medium and don't let it rest?

I consider cooking a craft that I like to be pretty good at but only for an audience. If it's just me its Trader Joe's microwave stuff or whatever's around. I don't eat much. Sometimes I'll make myself a little something fancy. Ya know what I make for my wife on request? Scrambled eggs. Mine are the best. I separate the yolks, whip the shit out of the whites into a froth and put the yolks back in then non-stick with a tablespoon of butter. Mess 'em up with a plastic spatula. Light and fluffy scrambled eggs easy peasy. Try it. You'll like it. It makes a difference

Medium rare. Too much cooking rapes the flavour and I like the consistency of medium rare.

nice fluffy egg whites eh. that's usually how i do my quick scrambled eggs with my spatula just the same, but i ain't ever separated the yolks beforehand and whipped the whites; then you say you break it up (the yolks) in the pan as it you put it in to cook. so it all 'congeals' together.

well, on the grill it's not necessary to add butter.
that's for pan frying, as per what we were talking about in the beginning of the thread.
you need to because the surface area and slower less direct cooking on the pan will overcook your steak, if you want to get a proper sear and caramelization, you have to keep the steak moist, and as an added bonus you get savoury buttery taste and feel to the steak, plus butter is accentuated by pretty much anything, so herbs are perfect for this style.
your way is perfectly fine, but i don't think you understand the capacity this extra three minutes of work is, to prepare for a pan fry, when you have the whim to do it. and it's easy.
it's not complicated.

No. After you froth the whites you add the yolks to the mixing bowl and mix them back in until it is a uniform color. Then you dump them in the pan and follow the usual procedure. Try it. Easy peasy. Next time I make 'em I'm gonna throw some basil in. We got some growing on the deck. Nice call.

I obviously missed something or didn't read very well. I never pan fry steaks. As far as I'm concerned steaks and pans go together like dicks and knives, which I suppose to some people is the preferred method. I wouldn't even buy a steak if I didn't have a grill.

Interesting idea. I'll take that under advisement but sour cream isn't something we generally keep in our larder. Probably been years.

If all you have is a pan do you give up on steak? I have made some pretty good pan fried steak. It is my last choice but if all you got is a pan fuck it, it's still a steak and you can make it taste damn good.

Personally I love steak with guiness bullseye cooked over charcoal. Not a whole lot of guiness. Just a nice thin coating thats had the ever living fuck caramalized out of it. Throw some onions on there and oh man. Beats the shit out of salt and pepper. I aint no purist about steak. Its flavour has the potential to be enhanced just like any other meat.

At least we can agree on that. Nothing ruins a steak more than cooking over medium. I cannot comprehend people that order steaks well done. Would you like some meat with your charred rubber cardboard?
Zappa that way of making scrambled eggs sounds interesting.. I'll get my woman on that stat She's the gourmet cook... I just do steaks and shit, it took me a while to get them down.
And yeah akira... for pan frying a steak.. cast iron or bust

you. fuck charcoal, wood.
char is overrated crap from anything but WOOOOOODDDDDDDDD (daddyzomed appreciates this)
ok, it's pretty obvious you're a gods damned John Snow because you know nothing
the cut of meat is important because it determines your prep methods, for tough cuts such as mock steaks, you want to marinade it in something that includes bromelain or MSG. both will help to tenderize the meat. a marinate with a little of what the fuck ever and some pineapple juice is the way to make it tender. with those cheaper tough cuts you als want to either cook it very rare or cook it for a long fucking time in some sort of liquid. a bone in rib eye will require more time than a T-bone which requires more time that a sirloin and while people balk at a well done steak, it's possible to have it well done without it being tough and dry but rare to medium is always better
as for wood... WTF do you think charcoal is made from? let's discuss wood vs charcoal
charcoal comes in 2 forms, compressed briquettes made from pressed heated sawdust and lump charcoal which comes from lumps of wood, this sort of charcoal is easy to make but is actually becoming cheaper than briquettes
wood, it's great but it gives off creosote, creosote is more or less a foul tasting unburned gas (fuel) that coats the food which is why people that use wood for smoking tend to wrap the food in something. sure, a short duration of cook time wont matter much but the drawback over charcoal is that you need to burn the wood down too a bed of coals in order to make good use of it. charcoal actually burns hotter than wood and makes it easier to maintain a consistent temperature for both grilling and smoking
