Medium rare. Too much cooking rapes the flavour and I like the consistency of medium rare.

At least we can agree on that. Nothing ruins a steak more than cooking over medium.
I cannot comprehend people that order steaks well done. Would you like some meat with your charred rubber cardboard?

Zappa that way of making scrambled eggs sounds interesting.. I'll get my woman on that stat
She's the gourmet cook... I just do steaks and shit, it took me a while to get them down.

And yeah akira... for pan frying a steak.. cast iron or bust

i'm not going suddenly up and pull out my grill at midnight..."hey everybody, hey neighbor's, i'm cooking steak, *sniff* mmmmm smell that?" *clanks, smoke billowing*

people'd think from afar "shit a fire!"

Nothing like busting out the barbie in your undies under the moonlight, puffing on a cherry spliff and thinking, "Shit's just this good."

you. fuck charcoal, wood.

char is overrated crap from anything but WOOOOOODDDDDDDDD (daddyzomed appreciates this)

ok, it's pretty obvious you're a gods damned John Snow because you know nothing

the cut of meat is important because it determines your prep methods, for tough
cuts such as mock steaks, you want to marinade it in something that includes
bromelain or MSG. both will help to tenderize the meat. a marinate with a
little of what the fuck ever and some pineapple juice is the way to make it
tender. with those cheaper tough cuts you als want to either cook it very rare
or cook it for a long fucking time in some sort of liquid. a bone in rib eye
will require more time than a T-bone which requires more time that a sirloin
and while people balk at a well done steak, it's possible to have it well done
without it being tough and dry but rare to medium is always better

as for wood... WTF do you think charcoal is made from? let's discuss wood vs charcoal

charcoal comes in 2 forms, compressed briquettes made from pressed heated
sawdust and lump charcoal which comes from lumps of wood, this sort of
charcoal is easy to make but is actually becoming cheaper than briquettes

wood, it's great but it gives off creosote, creosote is more or less a foul
tasting unburned gas (fuel) that coats the food which is why people that use
wood for smoking tend to wrap the food in something. sure, a short duration of
cook time wont matter much but the drawback over charcoal is that you need to
burn the wood down too a bed of coals in order to make good use of it. charcoal
actually burns hotter than wood and makes it easier to maintain a consistent
temperature for both grilling and smoking
