No, it's science. Letting the steak rest after makes sure it doesn't bleed out all over your plate.

No you don't. Wrap it in foil and then pour whatever comes out over the steak. That's some real steak sauce.. This method makes the juiciest steaks. Try EET.

We baste the ever loving shit out of our steaks with the butter/garlic/thyme/steak juice mix while it's cooking. It's already juicy as fawk But yeah, you can pour it over, (actually we do.. we pour all the pan drippings over the steak ) but it's better inside the steak, imo. You can dip the steak in it or whatever, but steak isn't exactly a sponge. All it takes is like 1-2 mins of resting and the majority of the juices will remain. That's how most of the fancy steakhouses do it. But I'll try it sometime.. for science.

I wish I would've known this last night before I made my fucking steaks! I'll check it out this weekend for sure. Does anybody season with anything other than salt and pepper that they really like/recommend?

Do you really not let them rest? I'm telling ya when you take them off the heat wrap them in foil and let them sit for a few minutes.

I'm pretty sure I was advocating letting the steak rest after cooking it. That's mandatory in my book. Only a heathen would cut into a steak fresh off the grill or pan or whatever. You gotta let it rest at least a couple minutes.

i like ginger beef too, so yeah GINGA BEEF
but not just Asian style, but like roasting the ginger like garlic and having it incorporated into the butter and as an edible and tasty garnish.

yeah, Ginger Pork is probably more Asian-style while Beef is more American/Asian, i mean in popularity anyway.
but yeah,with noodles or rice, it's obviously real nice and homey food.
