I just edited my post and added that little factoid. The vast majority of "kobe" beef in the US.. is not real genuine kobe beef. Chances are you wont ever see real kobe beef in the US unless you work / dine at some super fancy 5 star restaurant that gets the shit imported in. Prior to a year or two ago, it was basically impossible to even get real Kobe beef in the US. Now it's a little easier. But pretty much everything you see sold as "Kobe" in North America... is not. To actually be qualified as Kobe, it has to follow the strictest standards. Filet mignon is the best cut for tenderness. Porterhouse for grill and fire. Rib Eye is the best of both worlds, i'd say. great for grilling and fire {or charcoal} and more tender than a T bone; which i think would probably be better for a rustic texture for fire.

I judged a cook off once and got to sit in with this guy who won the World Series of steak cool-off and asked him for tips. One big one he'd told us was that you need to let the beef rest to room temperature before seasoning. Apparently it works amazing because I won't cook a steak anymore without doing this.
Also just salt fresh ground pepper and then get a good sear on both sides and then render the fat. After that add clarified butter to the pan with a bundle of fresh rosemary and a clove of smashed garlic and baste the ever lovin shit out of that steak until it's mid rare. Never go over medium rare. It's a crime to steak.

Yes... letting the beef rest to room temperature before cooking it is very important .. there is some science behind it.. but I forget why. I always do it though.
Almost as important is letting the beef rest after cooking it before cutting into it.
