i didn't specify, ok, well, i didn't specify the soup either.
well you'd have either have as good burger buns as you could find or you'd have it on Sour Dough for simplistic but flavorful, or a Rye or even have the open face on with butter and Pumpernickel. you could have it on a Pretzel bun!
but the more bold the flavor from the fire, and you'd have to avoid charring, any bit and you'd throw it right off, unless it was already at the end. watch for two minutes, and it's done.
and the onion soup i'd do it up with mushrooms (Morel's) and stock and salt pepper and then i'd need a blow torch for the cheese on top when it's done. little parsley. basil. viola.

anyone ever dined at Blue Hill Farms? i think Zappaisgod mentioned it before, one time in a food thread.
son of bitch.
Blue Hill at Stone Barns
http://www.bluehillfarm.com/dine/stone-barns
Suck it bitches. It was unbelievable. Flight of wine with the meal. I've eaten there a few times and their prices have gone through the roof lately. 4 of us about 2 grand. This time it was on somebody else's dime because my wife did them an immense service even though she wasn't on the commission list. Still immeasurably great.
I have made very nice steak in a skillet before. Obviously the preference is for a charcoal grill over pretty high heat. Almost every oven has a broiler. That is better than a skillet.
Here is a spiffy little trick that will make your steak much better. About 4 hours before you are going to cook it salt it on both sides and wrap it in plastic wrap and let it come to room temp. When you are ready to cook unwrap it and sprinkle it with coarse ground pepper. Cook to desired doneness (not more than medium rare. More than medium rare is for morons.) When it is done wrap it in tin foil and let it rest for 5 to 10 minutes. It will continue to cook a little bit but the juices will consolidate. The only steak I sauce is filet and that is only with Bearnaise sauce and only because the cut is rather lacking in flavor. It is not my choice of cut. Porterhouse, T-Bone, Strip and bone in Rib eye are where I go. Cheaper cuts may need marination. London Broil, for instance.

Well the most important thing is to start off with quality meat. Krogers has sales on ribeyes all the time but they are far from really good quality. A good steak should just need salt and pepper.

Everyone that said charcoal or gas is wrong. Nothing beats real wood on an outdoor fire that was built from scratch with natural materials.

I remember the first time I had a nice angus sirloin on an open fire. It was like I finally found out what steak tasted like.

That's how I cook prime rib. But not a steak. I like a sear on my steak.

I didnt read the thread but I know everyones basically going "you gotta get it at a perfect rare with nothing else on it for the best steak" in their best inpression of Ron Swanson. Some one probably brough up A-1 sauce which was met with horrified gasps and accusations against their manhood. Then theres the snob or two thats going on about how awesome kobe or porterhouses are admist all the pictures of steak.

I don't know who this Ron Swanson is but he sounds like he knows what he's talking about. However, nothing on it.. no. Salt, pepper, a little butter.. some olive oil.. maybe some garlic and a tiny bit of thyme. Fuck yes.
A-1 just completely overpowers any good steak.
But yeah, if you like well done steaks, then you pretty much have to use A1 because you just fucking ruined any flavor the meat had and turned it into chewy rubber.

I usually get some onions cooking in a pan in butter for a while, then I'll toss in peppers and mushrooms. Just let it simmer for a while. I'll throw that on my steak. Who needs sauce?

This is mostly my attitude except that Kobe is a breed and Porterhouse is a cut. Kobe beef is also pretty much a scam in my opinion.
