If a jar that is not 100% colonized and you got to travel...can you place it in the fridge to slow it down or temporarly stop the colonization?

I wouldn't. Just leave them be.

Keep them out of the fridge if it's only a week.
Worse case scenario you get some in vitro fruits.

Yeah, Keep them out the fridge. They will be fine. You may have alil "pooling" metabolites, but thats the extent of it.
Highly doubt you'll get invitro fruit bodies, after a week. Esp. If they aren't even 100% yet.
Just think of the week as consolidation time.

wouldnt happen in a healthy grain jar. I would not put uncolonized grains in my fridge post-sterilization!
it'll finish up in a couple-3 days probably and be ready for you when you get home.

Either way if they aren't 100% before you leave keep them out the fridge.. Or your asking more for trouble than reassurance. The fridge is a nasty fucking place.. Plus you'll wick outside moisture into the jars due to the higher temperature within your jars compared to the lower temp of the fridge
