are you spraying your cakes directly with the water? if so dont, just spray the walls of the terrarium not directly onto the cake. distilled h20 is fine. 12 hrs light is right. fan it 3-4 times a day just for a few seconds, if you fan for to long you will fan out all of the humidity in the terrarium.

the blue caould be from spraying the cakes directly with the h20.
pics would help to determine if it is normal blue bruising or a contam.
if it has no pins as of now getting a complete flush before xmas might not be possible, IME pins take atleast 5 days to mature sometimes longer depending on conditions in the terrarium.

you wont get shrooms before xmas,pins on cakes usually take 6 to 10 days,then five more +-a day to mature.
but hey...your new years is looking good.
