OP delivers on results.
Picking the first ones was a great decision for a few reasons,
1) They were indeed quite small, but I came back today to a full box of shrooms!!!, the little pins I thought would likely abort ended up having the room and nutrients to take off. My tub was so full I couldnt even get a hand in there to pull them off the substrate!
This is a 4 quart spawn, 5 quart bulk sub ( manure / coir / verm )which just delivered about 370 grams fresh. How is that in terms of yeild? I am blown away considering my last grow resulted in about 17 grams from the first flush and another 10 over the next few weeks. Fuck PF tek, amiright? 
2) Picking the early bloomers gave space for many more to take their place. I will continue to pick the early bloomers out of my tub on all subsequent grows. Aproximatly 4-5 days after the first pins.
3) I got just about 30 grams from picking the most mature ones on Friday. I took 22 for the 4th july fireworks at about 8 pm and there are no words to describe how magical the experience was. I'm pretty sure I had an orgasm during the fireworks finale. Not sexual at all, hard to explain, but fuck it felt great!

Piggy backing on this post, now how should i dry everything? I have a dehydrator but dont know what temp to set it too for best dry and most potency. Currently it's at 110 f. I started a new thread for this topic also.

I typically do 125. But really you'll be fine doing 160.
Using silica gel (desiccant) after the dehydrator is recommended especially if you're in a humid area like me. I put them in a big jar with desiccant at the bottom after drying in the dehydrator
glad it worked out.

About the FAE.
I'm going to have to start a thread about this but ever since I introduced a desktop computer fan running at 20 % power. ( just a light breeze ) every single thing I have grown has worked fucking great. No more "fuzzy feet" or stunted growth. From pin to mature fruit is 5-6 days on the money ever time.
I know alot of people say not to use a fan inside the fruiting chamber but clearly it has worked for me.
I keep my polyfill tight, and the fan on for half hour every 2 hours. A total of about 3 hours per day. Except mid day when it is hot in my room it is on for a whole hour.
Works great! I think they key is the low air speed. You can barely feel it on your skin. At most a 2 mph breeze. I aim the fan at a downward angle so it moves air from the top of the chamber down onto the substrate.

Be careful making that bet, some people have grown hydroponic mushrooms using an inert medium floating in a deep-water-culture system with LC as a nutrient solution and a humidity dome attached to the top to help control FAE.
I cant speak from personal experience but it does seem like something that can easily be accomplished through LC supplementation of inert media. How many people have hericium fruit on agar?
