how long do unninoculated sterilized jars take to contam in your experience?

I had like 20 sterilized jars that I couldnt get around to inoculate for just shy of 2 weeks. When I was ready I noticed they all took on what seemed to be cobweb mold and had to toss them. I thought ive heard they last longer however ive.never waited this long before myself.

It should be very few that contaminate and if they do with bacteria if they contaminate with mold you didn't sterilize them.

Hmm brf? I would kind of think they would just dry out before contaminating... unless they were moved? I'm pretty sure I had a wbs jar that I didn't use for two weeks... no noticeable contamination

I typically leave one uninoculated as a control. If it gets contaminated then I know I fucked up sterilization. If other jars get contams but my control does not then I know I screwed up during inoculation. Science!

You can cover the filters, I used to use jars with no filters. I have jars with no contams and I have no idea how old many are, some could be 10 years old, definitely lots 5+ years old. I found another few just the other day. I used to keep them to test out if my more unusual sterilization attempts would work. I stupidly did not date most of them, or keep notes.

I suppose if you cover the filter they would stay longer but I noticed slower colonization time from letting jars sit sterilized for 10 days before g2ging.
5-10 years, damn. You don't plan on using them do you lol?

Our grain sterilization is based on a SAL(sterility assurance level) of 6 log reduction 10E-6 but we also have th assumption that there's 10E6 CFU before sterilization so it takes 6 logs of kill to get to theoretical 0. Sanitation is 3-4 logs 99.9 99.99 kill but not good enough. After 6 logs to theoretical zero the industry considers sterilization another 6 logs after the CFUs are killed to get a 10E-6 jar that means there's a 1:1000000 chance of one CFU per jar. If sterilization is adequate. If you sterilize say to 10E-2 there exist a possibility that 1:100 jars may have 1CFU. If you sterilize a jar theoretically it shouldn't contam. But grains are tough to sterile since there not liquid media.

I have 1 year old WBS and 2 year old PF Tek jars that I never inoculated without any 'visible' signs of contamination.
Bacteria doesn't always 'show' though.

Oh and my above comment is not an endorsement for prepping a butt load of jars of head of time.
I have inoculated jars over a month after they were PC'd with decent results. I can't say I noticed a difference from the ones I inoculated the day after sterilization but the results weren't any better either.

I think some people sterilize 12 then find it difficult to stretch their syringe to more than 10. I use three holes instead of four, works fine
