Hey, long time lurker, first time poster.

I was thinking of using vacuum seal bags to seal my mushroom compost then sticking them in a cooler with a sous vide

To maintain the temp at 170ºf for a few hours to pasteurize. My main question is would I need any sort of air filter? I don't plan on adding mycellium directly to the pasteurized compost while they're still in the bag, I plan on making a mycotub and mixing the substrate and mycellium covered WBS. Will the vacuum bags of compost be ok post pasteurization or is there a danger of whatever is left over on them contaminating while they're in the vacuum? Thanks so much for your response.

I've considered a sous vide machine for pastuerization as well.  But not knowing when the core temp reaches the proper temperature and the ultra slow heat up makes me nervous of partial sterilization.  I do fine putting my substrate into jars and heating with a large pot.
