4-tier GH questions

Can someone give me a rough estimate on how to run my greenhouse as far as times? Every GH build is so different from one another I am confused now. 
I have ultrasonic that sits on the bottom. I have a PC fan venting out at the top. This helps stir the humidity so it doesn't just go halfway up, then sink to the bottom.
I was planning to run said fan and humidifier on the same circuit so they run at the same time. What do you guys think about as far as having another fan? Will I need another for FAE exchanges that isn't running with the humidifier? Or by keeping the humidity where it needs to be going to be sufficient enough for FAE since the fan runs at the same time? It sucks clean air through the bottom.
I also have no clue on how long to run the humidifier for. I have a hygrometer, but it adjusts so damn slow that it seems useless for dialing this thing in.
I also read in Stamets book GMM that 50-100 percent humidity is what you want. That seems like quite the range. I know it depends on species, but you see large oysters and other fungi outdoors that are quite healthy and the humidity is nowhere near 100 percent.

What do you plan on growing in there? Most oysters need constant FAE. King oysters and rishi are two i know that don't require that much FAE. Venting should be out at the bottom and in at the top, CO2 sinks. ~80% Rh should be good for oysters, i still mist my unit to let my ultrasonics take a rest and hopefully help induce pinning. I typically set mine to 85-92% RH. An ultrasonic running 24/7 will saturate the air, get a timer with the manual pins and play around with on off patterns till you get a good result. Placing a cool mist at the bottom as well would help stabilize RH between ultramist bursts and help FAE. Or you can use the cool mist like i am to push fresh humid air into the greenhouse via a tube.
I run a digital controller as my outside air humidity fluctuates greatly in the desert. It can be wired simply using an extension cord cut in half and wire it into the middle, do that inside a project box or 4x4 plastic junction box from a home improvement store.

I have been having the same issues in my 6x8 grow room. Can't seem to get the conditions right. Too dry or too wet, too much air or not enough.
I have a 5 disc fogger in the room with avortex fan that comes on to blow the humidity around. I also have a 550 cfm blower that brings in fresh air from outside. The humidifier and the fan go for 1/2 hour every hour, with the humidifier running an extra 5 minutes every cycle. The floors are always wet.
My kings will grow to a certain size then just shrivel and turn brown at the stems. Others will crack on the stem. Seems like its plenty humid so I have no idea what's going on. Any thoughts?
