I am thinking about starting an all grain ginger beer and could use a second opinion! I have created a recipe, but we'll see who's here/interested before I type it out.

Im interested in what you are using as a plant. Did you culture your own or did you buy it? I imagine its somewhat difficult to create your own but i can be wrong.

As with beer, check your fermenting temps, sanitize everything, use a big pot on the hot break so it doesnt make a horrific mess, and with ginger beer i've been told adding lime or lemon juice is super common if not the norm.

I dont have much experience or knowledge but im down to bounce ideas around and offer some help. :thumbup:

I'm planning on starting with a beer beer, then making a hard left with all sorts of ginger additions. So no plant, just yeast and grains/malts...

Here, I'll type my recipe out real quick! It needs critique because I really have no idea what I'm doing tbh.

Malts
8 lb 2 row brewer's malt
2 lb golden light DME
1 lb minich malt
1 lb American Crystal
keep at 120degrees for 20 min., 150degrees for 45 min., then 170 degrees for 5 min.
Add 1/2 lb grated ginger

Sparge w/ 7 gallons of 170 degree water
Keep boiling and add Hops:
1 oz centennial (60 min from flame out)
1 oz amarillo  (15 min from FO)
(add another 1/2 lb of chopped ginger w/ some orange peel and lemon peel)
5 oz. styrian Golding  (5 min. from FO)

cool to 65degrees, pitch yeast (thinking Wyeast1272) add another 1/2 lb of ginger

Then I plan to use candied ginger for secondary fermentation/back-sweetening.


I'm trying to mash a very citrus-y, heavily floral hopped, winter style ale
(it is an Elysian Bifrost mimic if anyone has heard of it) with a ginger appeal. It sounds weird, but citrus and hops should go well with ginger. "Ginger Beard" is an Irish red ale with ginger. I have a good taste for things and will mix vanilla bean and other spices as needed. I understand that these flavors will change with fermentation and I know very little about that process though.

I only worry that I could be using too much ginger, or that the hops will in fact overpower things. Worse case, I'm out $30 and learned a lot though.

That should work but it will taste a little different than traditional ginger beer using a plant. Like sour dough vs regular.

Ginger beer is really flexible, there isnt many hard rules set in place when it come to making it other than sanitation, carbonation, and a sweet or tangy ginger flavor.

Sounds like a good general purpose yeast which would fit ginger brewing fine.

5oz styrian golding sounds like a lot but its simply the last 5min and if you are going for a strong hops flavor then it sounds perfect. With the amount of ginger i would stick to what you plan on using and simply back flavor or not back flavor depending on the potency of it.

In all honesty i would be more worried about the hops overpowering everything than the ginger due to the sugar adjuncts and spices helping balance it out.

Nonetheless my cousin used to use 12oz of hops throughout the boil and it was still drinkable.

Ive seen Ginger Beard but never tried it, talk about a beautiful red color.

I guess the only way we will know if the recipe holds up is through a run but i have high hopes for it. :goodluck:

Thank you for the pointers!
-I'll keep my nose privy when I start adding the Styrian. Maybe I will take it easy there.
-Likewise, I'll pay attention to the yeast flavors and will probably experiment with GRP next time (looks interesting enough)!
-I'm worried about the hops too. The recipe I'm Frankensteining might just be too strong for a ginger beer. Oh well, I can always add water.

I haven't done anything but extract brewing, so it's all just experimentation. Here goes nothing! Luckily, I've learned a lot about sanitation thanks to other projects inspired by this place :wink:

Out of curiosity, what are some things that you back-flavor with? If it is too watery? Sweet? Not enough ginger?

Anything can be used as far as i know. I've heard of everything from fruit, sugar, cinnamon, anise, vanilla, synthetic flavoring, or even other alcoholic drinks like whisky.

Same here but my dad did a lot of malting when he was younger and said it was pretty easy. Just follow directions exactly and it wont cause issues. Sanitation probably is the hardest part but its nothing compared to doing G2G transfers and MS inoculations. Even mycology cleanliness isnt as hard as you would think.

Some day i would love to combine gourmet mushrooms with brewing and do a shiitake sake or something like collecting and isolating my own local yeast strain. GBP seems out of my league though interesting, its mostly bacterial growth and I know nothing about that! I would be lucky if i could culture clear yeast :rofl:

You might be able to do a mushroom beverage, but you might have to use some magic to make it palatable, haha!

True but in my case i will need some more education too. :rofl:

I couldnt do anything magical due to having a child now but i love the taste of shiitake so im sure i can pair it with something. Its going take a lot of experimentation but thats the fun part.

Please do post pics! Its cool to see someone do a ginger beer fro scratch even if it goes insanely wrong :lol::thumbup:
