Great idea, keepsake, in my opinion. There are risks involved; yet, i just tried to imagine myself in your father's shoes - i would definitely try it even if i died in the process.  In the long run, it's more important how you die than when you die. Having said that, i will also say i do not think there is a big risk of anything fatal for your father - he's still a youngster compared to Alfred Hoffman who took 150 mic LSD on his 100th anniversary. In fact, i have never heard of any death of shrooms among the elderly.
Regarding the dose i do not think there's gonna be really big difference in body load between 1, 2 and 3 grams. Yet, there is a big one between 1,5-2g and 3g in mental terms. 3 grams will most probably produce a spiritual psychedelic experience, while lower dose is more likely to be a nice euphoric threshold trip without real psychedelic breakthrough. Which would be a pity, IMHO.
Since you have some time before The Trip, try to enquire whether you father had ever tried any psychoactive stuff. Like weed, or kratom/kanna which are tropical and might be known in Vietnam.
Maybe, before shrooms you could try some good buds or edibles which will definitely prepare your dad much better than any verbal explanations.
I also strongly believe one cannot overeducate himself on psychedelics. So, i would use all the time before the trip to educate my father by showing him documentaries on shrooms, telling facts i know and scientific info, etc. I don't mean you should stuff him with all this, just a Youtube documentary today, an article from the net a couple of days later, a story of your own in a week, and so on.
All in all, personally i think this may be the best gift a son can give his father. At least, it worked in a vice versa case of my own.

If I may suggest it, put a good amoundt of ginger in that tea, and 10 drops of lemon essential oil. This can mean the difference between nausea and no problem. I doubt your dad would thank you for giving him a bellyache.
