I think it just means your good old fashioned standard handshake.
I'll admit I looked up the answer, and I still don't get it. It feels to me like something is still missing I don't get how I'm supposed to narrow it down. I'm patiently waiting til someone gets this right and I can hear an explanation.

I don't know how it is possible that everyone at the party could give a different answer. If there are 10 people, that means each of them have a different number of times they have shaken hands: 0, 1, 2, 3, 4, 5, 6, 7, 8 and 9. But if each person cannot shake their own hands or the hands of their spouse, and nobody shakes the hand of the same person twice, then nobody could possibly shake 9 hands.
If there is a legitimate answer to the question that's not a trick, then I am simply beaten.

I'd like to see you figure it out! I'm also confused but I don't think you're taking into account that for each couple either person in the couple can shake the hands of other couples.
So husband can shake 20 hands and wife 0, or husband 3 and wife 17, etc. Each couple can vary the husband and wife's handshakes with other couples.
Just explaining that part - obviously those aren't the answers lol, I hope I'm not spoiling the problem by saying that but I thought they explained that in the question. But I'm not understanding other parts of the problem so...

How can anyone shake 20 hands, or even 17? There are only 10 people in this equation, and two of them are off limits for each individual, so the most hands that anybody can shake is 8, or did I just completely read the question wrong?

@ second - yea, sorry, I was only using it as an example I didn't want to use any of the numbers from the question. Probably not the best example though...

Why does each couple have to add up to 8? Why is the number of hands the researcher asked relevant since he wasn't in the data set?

I'll assume weighing in your hand to get some guesses in doesn't work? Anyway I worked this out in my head for a bit and it seems like it might work. Objects 1-5 are # 1-5.
1 vs 2 2 vs 3 3 vs 4 4 vs 5 5 vs 1
Now in 5 weighs you can set up a sort of ranking order for the objects, which goes a long way I think, and then if the 2 extra weighs up to 7 are needed use them for 2 numbers that you know are greater and less than 2 other numbers but you don't know which is higher in that middle part. Like say 1 < 3 and 5 < 4. If those 2 extra weighs need to be exact, maybe like 2 vs 4 and 3 vs 5? That's my final answer!

This is a good one. I can do it in 8. But I'm sure there's some clever technique I'm not thinking of that can get it down to 7.
