Blue Oyster and Florida heat

I know oysters prefer the cold and I should have gone with the pinks or pearls. But I currently have a bag of wood chips colonizing and I was wondering what to expect. I am going to fruit it on my porch. Temps are between 90-70

Keep it in the shade for sure. They should still fruit alright even at high temps but if the sun is hitting them they will just fry.

Keep in mind that they likely wont be blue at those temps. As long as it stays humid, I'm sure it does in florida, then your porch should be fine. If you are going to strip the bag all the way off then I would either water it everyday or keep it out of the direct sun completely. Don't let it dry out

I was going to leave it on and make holes on it when I see pins. Btw Do you know what edibles do good in this heat?

The pink and yellow oysters love the warm weather. I'm working on obtaining some others to see if I can get them to fruit in warmer temperatures but we will see. Reishi does well and there is a warm weather shiitake floating around on the forum too.
I'd leave the bag on as well, once its fully colonized secure the top of the bag back by some tape or other means them cut an x in the plastic where you want it to fruit.
You can wait for pins too but then you'll be cutting wherever they form which could be anywhere. My king oysters do this on straw. Also, they seem to like it more when I cut near the pin allowing the pin to reach the exit themselves rather than cutting directly over them. I haven't figured out why

Yep, the only thing that I could see preventing it would be the temperature but oysters are extremely resilient and so long as it gets cool at night you should be fine.

Fans move air, they don't lower temperature. I guess if it were in direct sunlight the fan would help but it shouldn't be if it's on your porch. I would be worried about the fan drying it out. You said it gets down to 70 at night right?
I think they will do their thing at that temp. If you cut a slit in the plastic, it may help to mist there everyday as well. The evaporation will help trigger pinning.
In fact, if you have space in your fridge, once it's fully colonized you could stick it in there for a day or two then cut the plastic and stick it outside. The term for that is cold shocking and it's a method used to help induce fruiting.

as long as they see cool nights they will pin, and just keep it wet. Mine were growing under wood chips and i later placed some wet grass trimmings over it and misted 2-3 times a day. Your humidity is much higher than mine so you might not even need to mist.
