Are these oysters?

So i recently purchased some "Tree oyster" Grain spawn from mushroompeople and grew it on straw in a basket. Despite being 92-100 degrees all week outside some mushrooms decided to grow. The mushrooms that appeared look different from when i grew them the first time about 4 months ago on cardboard from an oyster sawdust spawn from the same company, those ones had a nice dark brown color. These from the straw are almost entirely white!? almost like an elm oyster or something. Now obviously the temp is drastically different then it was 4 months ago the avg now is 95 then it was like 70's is this the reason for the huge color difference? Or is it some kind of contaminate mushroom? It seems unlikely to be a contaminate mushroom since its growing on all of the baskets but my first ever grow got taken over by inkcaps 5 bails of straw back in the woods.. so i am wary of eating the wrong mushroom and dont have alot of experience iding oysters. I have some growing indoors (avg 78-80deg) and they look similar to the ones outside all white. So i guess my question is First of all they are oyster right?? second why such a different color then my first batch grown on cardboard 4 months ago? and finally are they safe to eat? Thanks for your time here are some pictures.

Here are some pics of the indoor one. It has a crazy stem because my paramaters were terrible at first. Not enough light and possible not enough fae once i put a cool mist in and 3 more cfls the caps started to grow out some but most were to late and aborted.

since nobody else is replying:
Don't take my word for it, but oysters aren't hard to ID. These look a lot like oysters to me.
always good to err on the side of caution though

They look like oysters to me. As far as the colour goes it sounds like you had phoenix or blue oysters before and those look like whites to me. I have been growing all 3 kinds indoors and out,the whites stay white but the blues and phoenix go a lovely gold/dark brown with the sun on them.

What are your temperatures? I've been growing blue oysters. When the temps have been cooler (60s-low 70s) they are a beautiful color of blue. As the temperature goes up the color seems to fade. When it gets to the upper 80s they are pretty much white. Blue->grey->white.

The temps have been insanely hot here. In-fact i didn't think they would even fruit because of the temp (but what do i know). Currently it has been about 90-100 degrees every day for the past week. They are under my deck so its probably 5 degrees cooler underneath in the shade but still very very hot.
Every one who replied thank you so much! I will be eating these oysters soon do they look about ready to pick? I was thinking another day or two just to see if they get any bigger.

I usually try to pick them before the edges uncurl all of the way and get flat. They'll get a bit bigger, but I think you would be sacrificing texture for quantity.

Oh also one more question.. My BE seems very low (like 40-50%?) Can this be attributed to the extreme temps??
My paramaters were as follows. (3) baskets of 8-10% Grain spawn to plain wheat straw soaked in hydrogen peroxide (3) baskets of 5-6% Grain spawn in wheat straw with a pinch of gypsum and a pinch of blood meal Colonized for 14 days with black garbage bag full of holes Opened trash bags and left under deck for 4-5 days currently day 6 of fruiting with just watering the baskets straight up with a hose for 5 min soak once a day.
The straw only baskets are the ones in the picture with its small amount of mushrooms
The straw basket with additives have even less then the plain straw. Its hard for me to tell (because of lack of experience and because i didnt have the same amount of GS in each) if the additives some how hindered them or it is due to the smaller percentage of grain spawn applied. Or even if its because the ones with the mushrooms were in the shade more then the others. any help is gratefully apreciated. thanks -Sand_Man

"BE seems low" what does BE stand for?
you soaked either your straw or grain spawn in hydrogen peroxide? (I've never grown oysters, but that doesn't sound like a proper tek to me.)

sorry be=biological efficiency. It seems that my total amount of substrate vs's the amount of mushrooms i got is very low.
As for the peroxide.. I have read that soaking the straw with hydrogen peroxide is ok for outdoor only use and it seemed to work. I dont think it would work for grains though.

those are oysters. you will get several flushes over time. BE for oysters is usually around 100%. you should harvest about the same amount of WET mushrooms as the weight of the DRY substrate you used. i usually only get 50-70%, though, before the fungus gnats and contams get to them
