Whoa where are you getting your information? That's seriously outdated.
Exposed grains are fine, if they recover and begin colonizing, it'll be the least of your problems. You want to mix them in thoroughly, and into the corners too. I normally mix the grains until there's a grain every cm in every handful. Then lightly pack it, so it's still airy and breathable, but without any peaks or valleys. Also tape the holes during colonization. Stuff poly in during fruiting.
Don't worry about the sterilization thing. It works with coir and verm, but with manure you MUST pasteurize. It'll keep beneficial microbes alive, which combat other molds, as well as kill off most bad mold spores. I do it in open air in my kitchen. No lysol used ever. You need it 100% clean and sterile right up until you spawn, then it's whatever. I use a really retardedly low spawn ratio (seriously not recommended) in open dirty kitchen air, and still do fine. I see grains every inch or so. It recovers great. Check back in 3 days and you'll be shocked at what it looks like.

Yeah it can get a bit funky the first few times you do this when you're not experienced.
As long as the sub is fully colonized it's pretty contam resistant.
I live in a "biologically active" environment so I take many steps to avoid contams when spawning to sub but others do not, with success.
After I'm done mixing I'll wipe down the sides of my tub with paper towels soaked in iso alcohol to get all the particles off of the sides. You should replace the polyfill if it got dirty.

yes you can do another flush. you can just pour water on it and drain it off after 2-4 hrs. or just mist it heavily with water. lift it up to feel if the tub is light or heavy.

Also plan on making another casing/Minitub from 6 half pint jars (1.5 quart spawn) is 3 Quarts of cococoir/verm a good ratio? Im officially done with cakes i tried to do 4 and they got full of myc piss and didnt look too good.. Can someone enlighten on casings? What exactly is a casing? Is that when there are layers of bulk/spawn? what im doing is just a plain ol tub right? Or is it a casing? Read some shit that got me confused now lol.

Before a casing:
it's fully colonized
After:
now it's cased. You add a top layer of something non nutritive after full colonization.
A casing is a moisture barrier used to initiate pinning. It's imo amazing and fool proof. Pretty lenient with misting.
 Here's it in fruiting, mycelium is poking out.
