Going to try my first grow on logs...

I've worked with cubes with pf-tek before. I'm on https://www.fieldforest.net/ trying to find out what strain, species and spawn type I want. Just had a couple questions. I'm currently in NC at the moment and want to start a grow by the end of July.
Between shiitake and oysters, what's more practical for my first attempt? What would you recommend strainwise, spawn type, etc.? Also, approx. how long would it take from inoculation to fruiting for either species?
Any help would be much appreciated.

In my opinion, or at least what I would do is try both species. NC is pretty warm throughout the year right? I would go with a warmer weather Shiitake strain such as S-75.
For Oyster strain, I prefer Blue oysters because they thrive in low temperature swings(all the way to frozen solid) but can also tolerate higher temps(70-80F).
I hope this helps a little in your decision. My reasoning for suggesting both is that I'm unsure of your general climate but also because it's more likely that you'll have success with at least one of the 2. I would bet both species will perform wonderfully for you though if you have a good idea of log growing technique.

That's what I was thinking. So blue oysters. I actually live in the mtns so it gets cold. Is the 'strain selection' based off of when they'll fruit (cold / warm weather) or when you inoculate?
For example, if I got a shiitake strain and it took nine months to fruit, would I need to get a warm strain (considering it's warm now) or a cold one (considerin it'll fruit in cold conditions)?

The warm or cold weather is referring to the fruiting conditions.

Awesome, thanks. And what about grow time? Can't you force growth by doing a cold water shock or whatever?
