Need tips Trying to start up a Gourmet Mushroom buisness!

Hey everyone! Me and a Family member have recently decided to get into the gourmet mushroom business and all growing responsibilities are on me!! well be selling to restaurant's,local grocery's and the public. The thing is I've only grown mushrooms on a small scale mostly PF tek. and don't have any experience with the gourmet variety's, were wanting to start out with shiitakes and oysters I was thinking of maybe starting out with pre colonized saw dust blocks and taking those and having a bunch of sterilized sawdust blocks I will make myself ready to go in bags and use the pre colonized blocks I seen for sale, to inoculate the ones I made to get a bulk amount going? we have a medium sized green house on the farm were thinking about using, so where should I start? whats the best conditions for gourmet mushrooms? what should I do to the green house? how can I get the biggest yields? I really want to get this all down pat so we can be a success this could change my life! any tips are greatly appreciated any advice would be awesome! this is trying to be on a semi big scale keep in mind for me lol. and also let me know what are the chefs favorite varieties? thanks guys and glad to be apart of this community.

Start a farm when you know what you need to do... These questions are what I would call red flags it sounds like you're not ready for a hobby grow let alone a viable operation

Well the best conditions are the ones the species your growing require. But you should already know this before even thinking about building something. You should be able to clearly explain in your own words the whole process front and back

Even that's not enough. Whenever you scale up there will be some unexpected challenges.

Well man were going to get it started for sure, were going to be growing oysters on straw and the shiitakes on sawdust and I want to grow hen of the woods on saw dust too. But here's my current plan: first im going to pick up saw dust spawn blocks from a supplier in Tennessee, then im going to pick up a few bales of straw "the yellow variety" and i have a saw mill right down the road so im sure i can get plenty of saw dust. I plan on making my own saw dust blocks in the proper bags and pressure sterilizing the saw dust blocks then taking the spawn blocks im buying which are 5.5 lb blocks fully colonized and hoping I can inoculate 10 of my own saw dust blocks per one spawn block!
That leads me to another question for anyone that knows, what is the round about yeild per flush on a sawdust block of shiitakes? and the yield for oysters per flush on a straw log?
As for the green house I plan on making some kind of mister set on a timer misting every hour or so around the hole area keeping humidity high, along with a window a/c or something similar to keep temperatures around 70 degrees. but will 40 bags and blocks be a significant yield? bc i know chefs alot of times will order 40 lbs in one order so im going to need alot of yield. lol and again guys any advice about growing on a bulk scale would be love! thanks yall.

I've only seen one talking about a commercial set up, and there wasn't much advice given thanks though.

There's over 100 threads on it. But most of the time it's people with years of experience still running into problems and asking for advice.
What biological efficiency are you trying to get. Which strains of the species you want do well in your area?

yea I hear you on the hobby scale, but I have successfully grown psilocybe cubensis 4 or 5 times with out contams or any real problems so I feel confident I will be successful, and I've already ordered 4 sawdust blocks of shiitake spawn and 4 sawdust blocks of pearl oyster. so if im correct at a 10 to 1 ratio I should end up with 80 sawdust blocks and/or straw logs. and from what I've read 20-40 sawdust blocks should produce 25-50 fresh lbs.a week so Im thinking I should be producing at least 75 lbs a weeks hopefully haha. which isn't to large of a scale to start out.

and im going to check those guys out thanks for tht info. but I want some advice on the way im planning to use a colonized sawdust spawn block to inoculate all my homemade sawdust blocks do you think it will work just like grain to grain transfers? bc thts my plan. and should I crumble the whole spawn block and sprinkle or just take off a chunk at a time and throw it into each homemade sawdust bag? thanks for any info guys!

i grew cubes before i knew a thing about the mushroom life cycle or sterile technique and had decent success. i know a lot more now and i still don't get consistant results growing edibles, after a year of indoor cultivating and four years of outdoor cultivation. you've got to admit, there's a lot of experimenting to do to dial in your personal set up and substrates before diving into a commercial business. imo, anyone should plan on a year of R&D before scaling up. but that's just my experience and opinion

Thanks man and ill definitely keep everyone updated throughout the process. i cant wait to get started! the spawn should be arriving on the farm tomorrow so im gon be pasteurizing and sterilizing all day probably haha.
