To pick or not to pick...

So I've got a couple guys here that are clearly totally grown and have already released spores, but the crop overall is nowhere near done fruiting.  There seems to be a lot of opinion out there that one should wait to harvest until the whole crop is ready, but man these guys are so ready...I also really want to eat them like right now.  Opinions? Thoughts?

by the way everyone, that giant guy in there, which is a GT strain I got from ralphsters that ONLY makes shrooms that are HOLLOW (although honestly not a great particular syringe overall) WEIGHED IN AT 44 GRAMS

I'm sorry to gush, but I'm just so proud of him.  I watched him grow from a liddle baby! Watched him burrow through my perlite...and now he's ready to make someone's day oh so much better.

Cubes are hollow. Temperature=more hollow. Gt is a variety not a strain. You have 100s of strains in a single cake if you started with spores.
