Tasmanian strain, need advice and help please

Below I am going to post shots of where I am in my grow process, I am at least 12 weeks in at this point. I have had to inoculate my jars twice go get results and even then it was a transplant of mycelium that got me to where I am now. I want my babies to grow but I am so new and don't know where I am going wrong! Any advice from those more experienced than I is greatly appreciated! Thank you thank you thank you. I appreciate your time and advice.

Is your sgfc built to spec? looks like they are lacking air..
I'd also stop handling the cakes with your bare hands.
Not sure about the red orange spot

sgfc =Shot Gun ??
There are not a lot of holes in the container, so I think I will add more. I am so concerned about moisture I may of not given the tank enough venting. Thank you!

iirc its 1/4 holes every 2 inches on ALL sides including lid and bottom and 4-6 inches of perilite

These are my next set of jars from the same inoculation. Do they look ready to birth? I don't think so, but it has been 13 weeks since the first unsuccessful inoculation and 11 weeks since the second inoculation that got me these results! These Taz strain are slow moving in my experience. But I am SUCH a total noob

Make sure to pay attention to this. Proper way to build your "shotgun fruiting chamber".
FAE "fresh air exchange" is far more important than humidity.
Edit:unbirthed cakes are not ready. I still we uncolonized portions.

Thank you for that! I appreciate all the help offered in the form of advice. Sadly the cakes look like they shriveled up more today. I added many more holes around the bottom off the fruiting chamber. I will try to find a good picture of the proper size holes so I can see if the holes I made are good enough. Thank you. (Yes I know you have given hole measurement size, thank you folks I just want to see how I have done in comparison so I can hit the mark.)

Are my cakes still viable, Or dead turkey? When I got home from work today and lifted the lid on the chamber to fan it, it didn't smell good...
Here's a few pics that I hope show some discolouration I am concerned about. It looks green, or maybe blue?
I end this picture series with a shot of that one weird cake that I call the marshmallow.
FYI Earlier this evening I took RR's advice and drilled my grow chamber full of holes! I now have great air exchange. I only hope it is not too late for this round of cakes...

I think they are dead. NOw I have to somehow clean my perlite and prep for the next 5 jars once colonization is complete, unless those have stalled...

Bleach + water solution, let soak for 1/2 hour. Rinse with water until no more bleach smell Bake in oven 350 degrees for a couple of hours.

Below are pictures of where I am in my grow process. I'd love to hear folks input on what they think. I am easily at about the 2 month mark on this grow. The colonizing seem like it is slow. But in the last week they have made progress after I did a few experimental moves.
When Do I pick the one mushroom i have produced? I really have no clue.

My grow here has really taken some time. I'm easily 2 months in with very few results and little mycileum growth. OR at least not what I expected.
After reading all the good advice folks have shared I did things to increase the Fresh Air exchange. Shortly after they seemed to start visibly colonizing again. I had thought they were dead or seriously stalled! I turned the jars upside down to force out any stale air and then put them back right. I also took the lids off and gave them a shot of water. Not much at all! One or 2 sprays.
I also just put the jars out in the open in direct sunlight after checking out Roger Rabbits videos and reading his information. It really helped!
I have put an air rock in a mason jar of water in the fruiting chamber to help with FAE and moisture. I don't know what that has done, after not seeing any movement on y birthed cakes I believed they were dead. I had taken them out for a 24 hour soak then put them back in the fruiting chamber, nothing so i added the air rock for 2 days, nothing. So i turned off the air rock stopped spraying the walls of my fruiting chamber with water and let the project just sit. I was gonna bag it. 2 or 3 days later I came back and low and behold, I had a mushroom!!! Wowza. I thought it was dead and it was alive. Funny things these mushrooms.

Mist the cakes and perlite, not the walls of your fc.
Also put something under your cakes like foil or a jar lid so they won't try colonizing the perlite.

I harvested the big mushroom, it basically fell off the cake. It had a fishy tang smell to it. I put it in front of a fan all day while I was a work and it has shriveled up nicely, but still has the fishy tang. Is it safe to eat?

Wow if there is one thing i have learned is that these Tasmanian mushrooms like it hot! Every time I think they are done a hot spell comes along and I get new growth. I have a bonafide cluster on my hands now. Pictures to follow.

I know these cakes aren't fully colonized, but after 2 months in the jar they were starting to turn grey and shrink. So I followed my gut and birthed them and submerged them. Tomorrow I'll take them out and put them in the fruiting chamber. The other cakes i have were birthed premature weeks ago and some died and some started to colonize. I'm new to this still and learning a lot. I wouldn't say i have written this lot off because they keep surprising me! But this has been a HUGE learning experience for me. It's fun and I am happy to be doing it. Growing mushrooms is fun. I love bringing something to life. Failures can teach one more than successes...

I bought the syringe from the local head shop. The spores were big and black like I hear the Taz's are... Not Taz's???

I've got syringes from them in the past for Z stain's and they turned out... Well a friend grew that batch. I just went half's on the expenses, but same store.
