Dunking cakes for longer than 24 hours?

It would be easier for me to let this dunk go on for 36 hours before rolling and birthing, but if I absolutely must, I can do it at the 24/25hr mark.

I've tried looking up some threads on it, didn't find too much info. Some people say they've dunked for 48 hours and it was fine, while others say not to do that.

(it's in the fridge. not distilled water)

I'm gonna go with 36 unless anyone tells me I shouldn't for whatever reasons.

Never dunked for that long but I would think they would be ok. After 24 hours they are pretty soggy and don't absorb any more water.

Cold shocking is not necessary.

I'm not cold shocking. Just using the fridge because it's a defense against contams during the dunk.

You don't need a defense against contams during the dunk.

Get them out at 24 hours. You don't want them waterlogged.

just make sure you rinse the cake off afterwards.

and I believe there is all kinds of nasty shit in a fridge unless your extremely sterile which no one ive ever known is with a regular fridge.
