OK....i am about to dunk 3 cakes but i don't know whether i should because in the FAQ someone said that dunking may not work and may increase times between fruiting periods. If you dont dunk then how does the cake know its time to initiate pinning? I am convinced that I don't have good luck with birthday cakes so I'm going to try casing and give it a shot. Does anyone have any tips for casing following the casing 101 technique? HELP--im really discouraged

Cakes should pin like a week or two after you drop the temps to 70-75, give them light and fan + mist.

Casing is easy -- just make the substrate layer and the casing layer as flat and even as possible, and apply the casing so it's airy by crumbling it between your fingers, and make sure you have the right moisture content.

dunking is great, but wait till the cakes are spent... they will feel light and dry, that is a good time to dunk them... got 13 flushes out of b+ cakes by doing that... was very nice :smile:
