casing question

alright, a case has been made with 2 1/2 pints. And covered with aluminum foil. the question is should the foil have holes in it? or should it be air tight? is there anything else i should be aware of? the only thing that really worries me is my own patience

I leave it airtight while it's running through the casing layer and only fan every other day. If there's not much room for air you'll want to fan it every day, though.

Once you fruit it (after it has run through the casing) you want a good amount of air and fan + mist every day, or more.

so it cant be covered and neglected for a few days? it needs to be aired out?

I use saran wrap without holes -- that's pretty much airtight. I use tall bins, though.
